CARDAMOM COOKIES
These delicious cardamom cookies take me right back to my childhood with the aromas wafting through the kitchen when mum would make it fresh for tea time.
150g plain flour
50g semolina
120g unsalted butter, softened
100g caster sugar
1 teaspoon baking powder
1 teaspoon cardamom powder
In a bowl which together the unsalted butter and caster sugar ti the sugar melts and the butter turns pale yellow and fluffily.
Add all the remaining ingredients and mix them into the butter , first with a spatula and then with your hands to form a soft dough, don’t overwork the dough.
Shape the dough into 3/4 inch balls and press on the top to make a small indent.
Bake in a preheated oven at 175 C / 350 F for 15 minutes.
Once the cookies are baked they will have a pale brown shade and slightly cracked, cool and keep in a biscuit tin.
