These Coconut cookies are soft, chewy and easy to whip up. Chewy on the inside and crisp on the outside. They’re beyond easy to make and add a light touch to the cookie platter all year round.
2 egg whites
½ cup powdered sugar
1 cup sweetened coconut flakes
1) Preheat oven 325°F. In a small bowl, place egg whites and beat on medium speed until soft peaks form. Gradually add powdered sugar, continue beating on high speed until stiff peaks form. Fold in coconut.
2) Scoop a cookie about a tablespoonful and 2 inch apart onto a prepared baking sheet. Bake 325°F for 18 to 20 minutes.
3) Serve and enjoy.
