A chocolate chip cookie should be. Crispy and chewy. Doughy yet fully baked. Perfectly buttery and sweet.

These chewy chocolate chip cookies are:

The chewiest of chewy and the softest of soft!
Extra thick.
Bakery style with an under-baked center.
Exploding with chocolate!

■2 and 1/4 cups (280g) all-purpose flour (spoon & leveled)
■1/2 teaspoon baking soda
■1/2 teaspoon salt
■1/2 cup (1.5 sticks or 170g) unsalted butter, melted & slightly cooled
■1/2 cup (150g) packed dark brown sugar if not available than you can use jaggery ( Shakkar) in this.
■1/4 cup sugar
■1 large egg at room temperature
■1 and 1/3 cups (225g)  chocolate chips or cooking chocolate chunks.

●In a medium bowl, add melted butter, brown sugar/ jaggery (shakkar) , white sugar, salt, white flour mix together until no brown sugar lumps remain. Whisk in the egg, then. mix together with a large spoon or rubber spatula. The dough will be very soft, yet thick. Fold in the chocolate chunks.
●Cover the dough and chill in the refrigerator for just 15 minutes or half an hour.
●Take the dough out of the refrigerator and allow to slightly soften at room temperature for 10 minutes.
●Preheat oven to 325°F (163°C). Place a baking sheet .  Set aside.
●Roll the dough into balls, about 3 Tablespoons of dough each.
●I Use ice cream  scoop. For drop cookies like chocolate chip, there’s no easier tool for making round cookies than a small ice cream or cookie scoop. Fill the scoop with dough, scrape the excess off by using the edge of the bowl, and just press and release onto the baking sheet. Each cookie will be exactly the same size and round!
●Place 8 balls of dough onto each cookie sheet. Press a few more chocolate chips/chunks on top of the dough balls for looks, if desired.
●Bake the cookies for 10 to 15 minutes. The cookies will look very soft and underbaked. They will continue to bake on the cookie sheet.
●Allow to cool on the cookie sheet for 10 minutes.
Cookies stay fresh covered at room temperature for up to 1 week.
