First of all, this recipe is inspired by Antonio Bachour, one of my favorite pastry chefs. So when I saw the recipe I thought I’m gonna try making it and see how it goes: this dessert has a cocoa spongecake, an insert of Milk Chocolate Namelaka, White Chocolate and Oreos Mousse and a White Mirror Glaze! ● Milk Chocolate Namelaka
¼ cup (67g) milk
½ tsp (4g) glucose
½ cup (94g) milk chocolate
one sheet of gelatin (2g)
½ cup (134g) heavy cream
● Cocoa Spongecake
⅔ cup (125g) granulated sugar
1 cup (107g) pastry flour
1 ⅓ tsp (6g) baking powder
⅕ cup (24g) cocoa powder
¼ cup (50g) vegetable oil
3 large eggs (167g)
¼ cup (69g) milk
● Cookies & Cream Mousse
1 cup + 2 tbsp (267g) heavy cream
⅔ cup (160g) milk
1 ½ cup (267g) white chocolate
1 ½ cup (150g) crushed Oreos
3 gelatin sheets (6g)
