How to make Achappam/Rose Cookies Recipe/Authentic South Indian Snack/Christmas Special/അച്ചപ്പം

It may look complicated but this traditional achappam recipe makes it effortless to make at home! It is very delicate but crunchy and delicious. It is made using achappam mould or maker called ‘achu’, which is a specially designed iron mould. The ingredients are mixed together to form a semi thick batter that is fried in oil. The iron mould is heated to a very high temperature in oil, dipped into the batter, then re-immersed in the hot oil to create a crisp shell around the metal then iron mould is immediately removed and the achappam is separated from the mould. It should be kept in an air-tight container so that it doesn’t loose its crispiness.
It is an essential snack for Christians in south India especially in Kerala for special ceremonies like marriages. It is said to be favorite among Christians during Christmas season and these are similar to European Christmas fruit cakes served during Christmas eve.

Ingredients:
1) Rice – 1 1/2 cup(soaked in water for at least 3 hours)
2) Egg – 1 medium(room temperature)
3) Coconut milk – 1-2 cups(taken from half coconut)
4) Black sesame seeds – 1 1/2 tsp
5) Cumin seeds powdered – 1/2 tsp
6) Sugar – 3 tablespoon
7) Salt – to taste

Tips:
* Patience is needed for making this recipe.
* Remember to heat the mould by dipping in hot oil every single time before dipping in the batter.
* It will be difficult to umould the achappam for the first 2-3 times with a new mould. It gets seasoned as you keep on using it.
* You can optionally give a coating of sugar for the achappam if you want a sweeter snack. To do this make a sugar syrup by dissolving 1 cup sugar into 1/4 cup of water. The syrup should be just sticky. No need of string consistency. Dip the achappam in the the sugar syrup and remove.
