INGREDIENTS :
✔️ 2 tbsp. chunky peanut butter
✔️3 tbsp. chopped almonds
✔️1/4 cup brown sugar
✔️1/2 cup milk
✔️3 medium purple yam ( mashed )
✔️2 tbsp. oats ( optional )
✔️1 tbsp. vanilla flavor
DIRECTIONS :
➡️ 1. Wash and boil the purple yam until cooked and tender. Mashed and set aside. ➡️ 2. In a medium pot, put the milk and oats and bring to boil.
➡️ 3. Lower the heat, add the peanut butter, sugar and mixed it all together.
➡️ 4. Add the mashed Kamote ( purple yam ) and cook together in a minimal heat for 10 mins, mix and scrape the bottom of the pot to insure of not burning it.
➡️ 5. Add the chopped almonds and cook for another 5 mins.
➡️ 6. Take a baking sheet with parchment paper to form the cookie. Use spoons to scoop out portion and shape it according to your preferences in size.
➡️ 7. Sprinkle with chopped almonds.
❄️ Chill for at least an hour and enjoy. 😍
