hi there I’m Bonnie Newland registereddietitian nutritionist and I am heretoday to show you a quick and easyrecipe to cure any sweet tooth and in myhousehold they’ve become affectionatelyknown as quarantine cookies so it’ssomething that you can do with yourkiddos at home or you can do it yourselfif you just need a little somethingsweet to take the edge off it’s foursimple ingredients that most of us havein our pantry so the first one is somesort of nut butter you can use a peanutbutter an almond butter a cashew butterwhatever you have on hand will work youwant two to three tablespoons of thatdepending on how moist you like yourcookies one bananaif riper better is better but if it’snot quite ripe will work with that tooand then either some chocolate chips orsome nuts or some raisins something likethat any kind of dried fruit that youhave on hand and a cup and a half ofoats they can be the old-fashioned oatsor quick-cooking oats either will workso what I like to do first is I like tostart with the nut butter and just putthat in my bowl so get that in there andthen I put the banana in and I like touse a fork to smash the banana up makesit a little bit easier to blend that wayand I like to blend my wet ingredientsfirst so I do these two together firstjust give that a nice whirl around inthere well don’t want to waste anybanana especially not right nowokay and then I get that into like acreamy mixture make sure it’s all wellmixed together like any dough shouldlook I’m gonna get rid of this tinyspatula here now and move to a big girlspatula and then I’m going to add a cupand a half of oats I have a half cupmeasuring spoon hereyou can add a little bit of a tongue ata time if you prefer I’m just gonnathrow it all in and muscle through itand then you just want to mix this untilit’s a doughy consistency it smellsreally good smelling the nut butter thisis a great recipe because the peanutbutter provides protein and a little bitof healthy fat and the oats provide agood source of fiber so it’s not like acommercial or bought cookie that tendsto be more fattening and full of sugarthis one has a lot of great ingredientsfor us okay so I’ve got that prettymixed in as you can see and now all youdo is just put your chocolate chips orwhatever other mix in you have insometimes I’ll even add a little coconutyou need to adjust your peanut butter ifyou add some dry ingredients likecoconut it’s gonna take away a littlebit of the moisture so just adjustaccordinglyyou’re gonna pre-heat your oven to 350and these cook about I don’t know 10 to12 minutes depending on your set timeand what I do is I roll them into ballswith clean hands of course extra handwashing right now the dough should be alittle bit sticky that’s what helps youknow that they’re gonna be moist afterthey cook what struck to check there butyou’re gonna roll them into balls likethis and then just place them on yourcookie sheet I like to put parchmentpaper on my cookie sheet so we’re gonnago through and I’ll come back to youwhen they’re done so I have all mycookies on the cookie sheet here and Imade them into balls and then all I didis just use the clean hand and just kindof cap them into the thickness that youprefer I like mine a little bit thickerbecause I like the moist dense cookieand I’m gonna stick them in the oven andI’ll show you what they look like whenthey’re done alright so here’s thefinished productmy little quarantine cookie I’m gonnahave tomy afternoon snack and just to recap youuse a cup and a half of oats two tothree tablespoons of a nut butter maybe1/4 the cup of some sort of mixing weuse chocolate chips and then one mashedbanana you turn your oven on to 350 andcook them for about 10 to 12 minutes andthen just enjoy thank you
