Favorite NO BAKE COOKIE Recipe! | Home Baking Tutorial

After spending months in Seoul without an oven in my apartment I was really craving something sweet and homemade–but baking without an oven is a bit unusual for me! Slowly I have been brainstorming, testing and perfecting a handful of recipes that anyone could make no matter what they have in their kitchen!

These cookies are very easy to adapt to different flavors, and without gluten, dairy or refined sugar, they are quite healthy for being a sweet treat!

(Also yes, I know there is a typo in the beginning and I do in fact know how to spell raisin! 😬 🙊 I don’t know how to replace the video without deleting the entire post and re-uploading it….so the typo remains lol sorry folks)

No Bake Oatmeal Raisin Cookie Recipe:

Nut Butter (I used peanut butter but any can be substituted) 1/2 cup (125g)
Coconut Oil 1/3 cup (35g)
Honey 1/3 cup (125g)
Oats 2 cups (180g)
Raisins 1/2 cup (70g)
Nuts (I like pecans or walnuts, they are optional) 1/2 cup
Cinnamon 1 tsp (TT)
Salt 1/4 tsp (TT)

Melt the wet ingredients and pour over the mixed dry ingredients. Portion and refrigerate before eating! *Best kept in the refrigerator for best consistency!
