Elsa Baking Simple Cookies

Here is Elsa baking simple cookies… Using an easy recipe, our 3 year old (dressed as Elsa from Frozen) shows you how simple it is to make cookies that are soft and tasty. If there are any left over, these cookies are good enough to freeze! 😉

If you like your cookies crunchy, you might like to add 70g of flour and make the cookies smaller, or cook them a little longer. If you like your cookies chewy, you might consider adding 4 tbsp of Golden Syrup and/or oats (which can optionally be blended into a fine powder).

Hey, I’m no expert… not a chef… or even a good cook… but that is the beauty of it – if I can do it, so can you! 🙂 Here’s the recipe… seriously, why would you bother buying a packet mix?…

INGREDIENTS
225g of unsalted or reduced-salt butter (room temperature)
225g of white sugar
2 tbsp/30g brown sugar
1 large egg
1 tsp vanilla
2.75 cups (360g) plain flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

INSTRUCTIONS
1. Heat [fan-forced] oven to 350°F (180°C) and line an oven tray with grease-proof paper
2. Cream butter and sugar together
3. Mix in egg and vanilla
4. Add that to mixed dry/remaining ingredients and stir together (only until well-blended)
5. Roll into balls (about 2 tbsp of dough each) then flatten with your palm on the oven tray
6. Bake until not-quite-golden (about 7 minutes)

Note: If you’re like me and like your cookies warm, you don’t have to cook all the cookies at once. Put some of the dough in the fridge for the next day or two and the rest in the freezer.

Tip: Get yourself a digital scale if you don’t already have one.. you can zero it on the empty bowl and then after each different ingredient has been added to the bowl so you can weigh them separately – no Maths required 😉
