HOW TO MAKE EGGLESS BUTTER COOKIES

Crunchy butter cookies prepared by baking all-purpose flour, butter, and sugar without eggs.

These eggless butter cookies are delicious because of the richness of the butter. Recently I have bought a microwave convection oven and I am so happy and excited to explore different baking recipes. Today I will show you the baking method and recipe of one of the most favorite cookies, butter cookie without eggs.

Biscuits and cookies have become a regular companion in our current lifestyle. There are multiple varieties of tasty cookies available in the market and this butter cookie is an inevitable one among them.

Ingredients

Ingredients: (1 cup=240g)

2 1/4 cups all-purpose flour (maida)

3/4 cup butter room temperature

1/2 cup powdered sugar

1 tsp vanilla essence

1/2 tsp baking salt

Few tbsp milk or oil (to knead)

Instructions

Preparation:

Powder sugar and keep readily available.

Keep butter in room temperature.

Recipe to make butter cookies:

In a large mixing bowl, measure and take butter in room temperature.

Add powdered (icing) sugar in the bowl.

Start beating or mixing using electric beater (low speed) or use a hand mixer.

Mix the butter and sugar thoroughly into fine paste consistency as shown in the picture.

Now sieve and add the flour.

Put half a teaspoon of baking salt. If you use self-rising flour don’t use baking salt and replace it with 1/4tsp salt.

Mix again with a beater or spatula. It will turn into a crumbly texture.

Add a tsp of vanilla essence and mix well.

The dough becomes wet crumbly texture because of the butter.

Start kneading again to form a whole crack less mass.

If your dough is still powdery and able to knead, you can use few tbsp of oil or milk to knead.

I used 2 tbsp of milk to form the dough as shown. You can use warm water or oil just to hold the dough together.

Now shape the dough lengthwise and roll this dough in a paper wrap or baking paper tightly. I shaped it as square long dough so that it will easy for me to get square-shaped cookies. You can either make round or square-shaped butter cookies.

Now keep the tightly wrapped dough inside a freezer for 30 mins to harden a bit.

Preheat the oven to 180deg Celsius.

Grease or line a baking tray and keep it ready

After 30mins remove the dough from the wrap and cut into 1-inch thick slices as shown in the picture using a sharp knife.

Place the cookie dough slices by giving enough space.

Bake in convection mode for 15 mins.

Once done, let them cool down for half an hour at least.

Initially, the cookies look softer, but when they become completely cool it becomes crispy.

How to bake in a pressure cooker:

If you do not have an oven, use a pressure cooker to bake the cookies.

Fill one kg salt (crystal or powder) into the base of the pressure cooker. You can use clean sand instead of salt.

Just heat this salt or sand in the pressure cooker for 20 min (do not pressure cook). Now your preheated oven like cooker is ready to bake.

Keep a stand/plate, which comes along with cooker, above the hot salt.

Place the sliced cookie dough pieces in a greased aluminum or stainless steel plate and keep it on top of the stand.

Remove the gasket and pressure weight from the lid of the pressure cooker.

Close with the lid and bake the cookies for 15mins. You can check the doneness of the cookies in between if you want.
