These biscuits/cookies I haven’t made in a long time but I know they are yummy. We had an empty biscuit jar in our house so I decided to bake more and share my recipe with you. hi everyone and welcome back to cootieskitchen and if you are new here thenhello and welcome my name is Alexis andtoday I want to show you how to make mydelicious easy vegan digestivesas I just mentioned today I want toshare with you how to make my deliciouseasy vegan digestives now as I just saidthis recipe is really easy to do and Ilove having biscuits in the house sosince giving up processed foods andsugars I don’t tend to buy biscuitsanymore I always like to make my own sothis is one of my recipes that I puttogether because I always used to love adigestive biscuit and this is a it’s notthe same as I digestive biscuit I haveto say that it’s very similar to it andalways actually think it’s a bit tastierthan a digestive I’ve had lots of spicesto mine which make it really yummy Ihave to say so I thought I’d share thisrecipe with you today because we’ve runout of biscuits completely and we needsome more and I have made this one in alittle while so I thought I’d show youhow to make it today so here is how tomake my delicious easy vegan digestivesso I’ve laid out all of my dryingredients and the first thing I’mgoing to do is put my oats into mymixing bowl into my large mixing bowllike so and then in the original recipeit says spelt flour but I’m not too surewith romic home spelt flour or not soI’m actually just going to use brownrice flour today if you want to andyou’re okay with gluten then you can youspelt flour so I’m just going to stickthat in so yes and then in this bowl Ihave a quarter teaspoon of nutmeg andthen I have a quarter teaspoon of groundcloves as well and then in this bowl Ihave- teaspoon no sorry a teaspoon ofcinnamon as well and then in this bowlI’ve got just about a half a teaspoon ofsalt which I’m going to add to that aswell and then I’ve normally used vanillapowder but I don’t have any vanillapowder in so I’ve got this and this is aproduct I bought from a little localfood market in a casting we’re in Katesomewhere we’re by the sea I can’tremember the name of the place now Imean this is called the magic peach andthis has lots of herbs and spices in itit smells lovelyI’ve never tried it in these digestivesbefore bus so I can we go if you haven’tgot this and you want to use a littlebit of vanilla essence or vanilla powderthen please do so I’m just going to addthis in as wellwhat I do is mix my drawing radiancetogether now until everything is wellmixed in so as you can see I’ve movedover to my Harbor and now I’m going tomelt down the wet ingredients in a smallsaucepan on the hob so I’m just going toput the hob on to a low to medium heatand then in this bowl I have 125 gramsof coconut oil which I’m just going toput in here and then this bowl I have125 grams of maple syrup and I’m goingto pour this in now as well and thenwhat I’m going to do is time to mix bothof these ingredients together untilthey’re all and so the coconut oil ismelted completely so as you can see thecoconut oil has melted completely now inthis cold weather in the UK the coconutoil does takes intend to stay harder fora lot longer in the Sunit melts really nicely as the maplesyrup very quickly so this probably tooka good five minutes before it all meltedin the pan but it’s melted now so I’mgoing to add this to my dry ingredientsas I just said I’m going to add the wetingredients to my dry ingredients I’mjust going to pour this over and thenI’m going to mix don’t drop everythingI’m gonna mix these together now theysmell delicious alreadyso when you all man milsim down thecoconut oil you don’t want to cook it Ijust simply want to melt it down if youlive in a cold country like this you’llknow how hard coconut oil gets so yeahthat’s all you need to do with it it’sjust melty and I’m just gonna mix thesetwo together now you may need to add abit of extra milk if your mixture is drythis looks actually quite wet it looksas though it’s okay but you may need toadd a little bit of extra milk so I liketo add own milk you can add any type ofmilk you like it doesn’t have to be oldmilk I’ve got a little bit of extrabrown rice flour now so I’m just goingto put on my balls and just so that mybiscuit dough doesn’t stick and now I’mgoing to do I have clean hands I’ve justwashed them it’s I’m going to put myhand into the biscuit dough and we’regoing to roll this out until it’s aboutprobably about half a centimeter thickI’d say this is very crumbly as well sojust be cautious when you do roll it outit probably is a good idea to add a bitof milk I didn’t do it this time butnext time I think I’ll probably will addthe milk actually so yes I’m just gonnaroll this out now and as you can see itneeds to be about that sicne so probablyabout a cultural scenemate it’s a half a centimeter thick soI’ve got my little cutter and I’m justgoing to cut into the dough and I’mgoing to put that onto my spare boardover hereand I’m going to continue to do thisuntil I’ve used up all of the dough inthat bowl so tada I now have a try and ahalf of biscuits which I’m going to putinto the fridge now for those of youwatch these sorts of videos beforeyou’ll know that I like to put mybiscuits into the fridge before I putthem into the oven when I put them inthe fridge it makes them go cold and thecoconut oil hardens and then I put themon a hot something called a stone andthe stone is normally warm so when itgoes into the oven the biscuit isfreezing cold in the stone is warm andthat makes them go really nice andcrumbly I find so that’s why I alwaysput them into the fridge so I’m off toput these in the fridge now whilethey’re in the fridge I’m going topreheat the oven to 180 degrees we’regoing to also and put my pampered shipas well just because yeahnow don’t worry it too much if you don’thave stoneware you can always use abaking tray with a piece of parchmentpaper or grease proof paper on the topor you can grease a baking tray as wellstill does the same job I just loveusing these stones that’s all so I’mgoing to put those in now as well rightso the oven has preheated and I havetaken the biscuits out of the fridge andas you can see I’ve put transferred themto the stone and I’m now going to putinto the oven for about 12 minutes butyou can see the biscuits of finishedcooking and I actually put them in theoven for about 14 minutes at 12 theywere a little bit anemic as my husbandwould call them so yeah I put them infor a bit longer because he does likethem a bit darker and I’m just gonna tryone now because they smell delicious andI’ve just had my lunch so this is mydessert my treatmmm really good really yummyexcuse me mmm so what I’m going to donow is I’m going to transfer these to aglass jar and then I’m going to sit havea couple of these with a cup of tea soso that’s how you make
