Learn how to make delicious homemade oatmeal cookies made just from oats, sweetened with honey, and packed with your dried fruit and nuts of choice.
3 Cups Rolled Oats (240g)
1 Cup Oat Flour (Ground Oats) (80g)
1/2 Teaspoon Baking Soda (2.5g)
1/2 Teaspoon Salt (3g)
1 Teaspoon Cinnamon (2.8g)
1/2 Cup Olive Oil (120ml)
1/2 Cup Honey or Maple Syrup (120ml)
1 Teaspoon Vanilla Extract (5ml)
3/4 Cup Dried Cranberries or Other Dried Fruit (90g)
1/2 Cup Chopped Cashews or Other Nuts (60g)
1. In a large mixing bowl, whisk together the oats, oat flour, baking soda, salt, and cinnamon. Set aside. In another bowl, whisk together the eggs, olive oil, honey, and vanilla until well combined. Add this mixture to the oat mixture and stir until well combined. Fold in the dried fruit and nuts.
2. Line baking sheets with parchment paper. Scoop 2 tablespoons of the oat mixture and form and press into a ball. Place cookies on the baking sheets and carefully press down each ball with your fingers to form a disk. Bake in a preheated oven at 375F with rack in center position, for about 10 minutes, turning the baking sheets around halfway through baking. Cookies will be golden brown around the edges. Let rest in pan 5 minutes then move to a wire rack and cool completely.
