oven temp – 180C/350F/GM4
2 Tbs jam or marmalade (lemon curd might work, but I’ve not tried it yet!)
3 oz butter or margarine
Beat these together
Add in 5oz plain flour and HALF a teaspoon baking powder (or use self raising flour)
Add in 1oz or 2oz of extras, for example chocolate chunks, glaze cherries cut into chunks, desiccated coconut, dried fruit etc
Combine into a dough, roll into balls (we made ten) and place on greased baking tray. Push them down to flatten slightly.
Cook for 10-15 minutes. Check them after 10 minutes, and keep an eye on them. Mine probably needed a minute less!
