Blue Corn Cookies- Lucky’s Bakehouse

Blue Corn Cookies

1 cup unsalted butter
1 ½ sugar
¼ cup brown sugar
2 eggs
1 t vanilla
2 ¼ cup all purpose flour
1 cup blue cornmeal
1 t soda
½ t salt
½ t baking powder

1. Preheat oven to 350 degrees

2. Set aside a baking sheet lined with parchment

3. In a kitchen aid with a paddle attachment cream the butter and sugars. Add eggs one by one and continue creaming until light and fluffy. About 1 min on medium speed. Add the vanilla. Mix all the dry ingredients together, and add to the butter egg mixture. Continue to mix until fully incorporated.

4. Portion out your dough using a Tablespoon, make sure it is rounded. Roll in sugar and bake 2 inches apart. Bakes approx 10 minutes until starting to brown around edges and barely set in the middle. They continue to cook when finished, and you want them chewy on the inside, crunchy on the outside.

hey guys we’re back for our secondepisode of baking Lucky’s bake house andme Jen we’ve had several requests and bythat I mean two for the blue corn sugarcookies which is absolutely one of myfavorites one of the staff favoritesAlyssa the bake house goes crazy overwhen we both love them so we thoughtthat’d be fun to do today plus youprobably have everything you need tomake them and if you don’t have bluecornmeal that’s fine just about regularcornmeal the only reason that we like todo blue is because a lot of my family’sfrom New Mexico lives there now so Ijoke you know to the farmers market is abeautiful stone ground with the corn butno problem if you don’t have that someof you might some of you might not andanother thing that is fun is you know Ithought these are a good thing to do forspring and summer baking because theymake literally the best ice creamsandwiches you’ve ever had in your lifeyou compare it with like a berry icecream cinnamon whatever can also prescoop the cookie dough and put them inyour freezer so if you just want to havefresh baked cookies I don’t know youknow just last-minute you can pull it onthe freezer bake up we like to roll alittle sugar so it makes this likecrispy sugary coating they’re great todo that with too and you can do thatwith a lot of things quite honestly thatyou bake with you know like if you’remaking biscuits or cookies or even prescoop muffins that’s kind of how we doit at the big house in order to bake forthat not to volume so the freezer isyour friend when it comes to baking alot of people don’t know that and anyhowI’m excited to make these today andlet’s just get started so what you’regoing to need is all-purpose flourcornmeal sugar brown sugar eggsroom-temperature butter vanilla bakingpowder baking soda and salt you’re goingto start by putting the butter in yourmixing bowl with a paddle attachment addthe brown sugar the regular granulatedsugar and you’re going to mix that onmedium speed and keep beating it untilit’s light and fluffy add the eggs oneby one[Music]followed by the vanilla get that lightand fluffy and creamy one to two minutesthen you’re going to add all of your dryingredients and you’re going to mix thaton low just until the whole cookie doughmixture comes together and then you’regoing to take that out of your bowl putit in a separate bowl to startportioning it for bakingyou’ll want a baking sheet withparchment paper and I use a tablespoon aheaping tablespoon to portion it out Iroll it in sugar and place about twoinches apart on the baking sheet and nowyou’re ready to bake you put them inyour oven at 350 degrees and they takeabout ten minutes to bake you can rotatethem halfway through if your ovendoesn’t bake evenly[Music]hey thanks again for joining us todaythis recipe me about three and a halfdozen will post the recipe online likewe did last time keep looking for moreof these to come out we’re having agreat time doing them makes me feelconnected to you guys and yeah that’s itlook for us next time bye[Music]

  7. Ive gotten ALOT of questions about the cream, Its 1/2-3/4 cup of cream that goes in the beaten eggs!

  8. Little tip, put a little oil in measuring spoons/cup before you put maple syrup, honey, anything sticky it will slide out when pouring into recipe!!! They look yummy
