Recipe:
Tangzhong:
40g flour
200ml water
Dough:
750g flour
60g sugar
7g yeast
10g powdered milk
260ml warm milk
50g egg
50g tangzhong
50g room temp unsalted butter
12g salt
Egg wash ( 1 egg + 15ml milk or water )
Tangzhong Procedure
– Mix flour and water on a pot and cook it on low temperature.
– Keep mixing it until it forms into a paste-like consistency
Dough
1. Mix your warm milk, egg, 1 spoon of sugar and yeast, set aside for 15-20 minutes.
2. On a separate bowl, mix flour, milk powder, sugar and salt. Mix.
3. If your yeast is already proofed, mix it to dry ingredients. Mix until it form into a smooth dough.
4. Cover and proof your dough for 2 hours.
5. After proofing, you can start portioning your dough and after that you will cover and proof it again for another 45 mins. You can start pre heating your oven. (180 c)
6. Before baking, apply eggwash on top of your dough. Purpose of this is it will give your bread an amazing color when its baked.
7. Bake for 20 to 25 minutes.
8. Enjoy your Milk bread rolls and share it to your family and friends! Stay safe!
