Today’s recipe is for quick and simple banana bread. Most of the ingredients can be substituted for whatever you have in your cupboards.

Ingredients: (MAKES 1lb loaf)
250g self-raising flour
60ml soy milk
80ml neutral oil (such as rapeseed)
80g brown sugar
1 tsp vanilla extract
1 tsp cinnamon
3 ripe bananas
Method:
1. Preheat oven to 180°C (fan)
2. Mash the banana in a large bowl
3. Add the sugar, oil, milk & vanilla then mix to combine
4. Next add the flour & cinnamon then mix thoroughly, being careful not to overmix
5. Pour the mixture into a greased or lined 1lb loaf tin (approx. 16 cm x 11 cm x 7 cm)
6. Bake at 180°C for 40 mins until golden & firm
7. Carefully remove from the tin & allow to cool
8. Serve & enjoy!
