Spanish Bread (No Mixer) | Filipino Bread | #bakerdelights

Spanish bread is another popular bread in the Philippines especially during ‘merienda’ time.
I couldn’t resist these soft bread rolls that are filled with sweet buttery filling and dusted with bread crumbs.

So I recreated this bread right in my kitchen. To make the filling so tasty I added all purpose cream.

This recipe yields 16 pieces of bread. Now, let’s bake!

BREAD INGREDIENTS
1 cup warm milk
1 tbsp sugar
75 grams or 1/4 cup melted butter
1 egg
2 tsp active yeast
3 1/4 cup all purpose flour
3 tbsp sugar
1 tsp salt
Olive oil (For kneading and greasing)

FILLING INGREDIENTS
115 grams or 1/2 cup softened butter
1/2 cup brown sugar
1/3 cup condensed milk
1/3 cup all purpose cream
3 tbsp flour
3/4 cup bread crumbs

PROCEDURE
1. Combine the milk, butter, sugar, egg, and active yeast in a bowl. Let proof for 10 minutes.
2. Add the flour, sugar, and salt into the bowl with the yeast mixture.
3. Transfer on a dusted working surface and knead the dough for 5 minutes until smooth and elastic.
4. Cover with cling film and let rise for 1 hours.
5. Meanwhile, prepare the filling by adding the butter, brown sugar, condensed milk, all purpose cream, flour, and bread crumbs.Mix until well combined. Set aside.
6. Prepare the bread by cutting the dough into 16 pieces.
7. Roll the dough into a ball then flatten with a rolling pin.
8. Scoop 1 tbsp of filling on the dough. Roll it and tuck in the ends.
9. Arrange in a baking pan and cover with cloth. Let rise for another 20 minutes.
10. Baked for 15 to 18 minutes at 180C temperature.
11. Remove the bread from the oven when the top turns golden brown.
12. Cool down for 5 minutes before serving.
