Sourdough bread with linseeds | boost your immune system

Sourdough, water, salt and flour are enough to bake a delicious bread.

To get a crispy crust, the bread should be baked in a steam oven. The same can be achieved with an iron pan, a bowl or a brick.

Sourdough recipe:
You start the first sourdough three days before baking bread and it is important that you feed the sourdough regularly.
Day 1: 50g wholemeal flour
            50ml water
Mix in a tall container and leave to stand at room temperature for 24 hours.
2nd day: 50g wholemeal wheat flour
            50ml water
covered and let it rest for about 24 hours.
3rd day: 100g wholemeal wheat flour
            100ml water
Your sourdough should be active and the dough is ripe on the fourth day.
Then you can keep the mixture in the refrigerator and feed it again each time you take something out.

Ingredients for one bread:
300ml warm water
1 teaspoon of salt
100g sourdough
250g wholemeal wheat flour
250g wheat flour
2EL Linseed grist

Mix all ingredients together
Form the dough into a bread ball
Ferment for at least 12 hours at 5°C (in the refrigerator)
Bake in the preheated oven at 250°C for 30-35 minutes
