Rules! Rules! Rules! Forget them. Baking bread can’t be an exact science because every baker does it differently, yet they all end up with beautiful and delicious bread. Here’s my method. This is sourdough bread baking simplified!
This makes one 4lb loaf with a thick, dense crumb (who needs air holes?) and crispy crust. ENJOY!
6 cups all-purpose flour
1 1/4 cups whole wheat flour
2 cups sourdough starter (you can find that recipe here: https://youtu.be/W0vxT2Pqea4https://youtu.be/W0vxT2Pqea4)
1 TBSP sea salt (or other course salt without iodine)
1 1/2 tsp yeast
2 1/4 cups water
