[Music][Applause][Music]hi Melissa hi dog hello hey hey Balaamand Lauren’s out there – I’m doing inthis unusual times we are eating a lotwell if you’re married to Doug I knowyou’re eating really well yes I’m veryfortunate to have someone who loves tocook who uses it to de-stress and tomake his way very very happy so Dougwhat are you gonna show us today this isa no need Dutch oven broKrusty young six quart Dutch oven knowsthat doesn’t even come into play untiltomorrow so the ingredients are floursalt water and yeast and because I’venever been able to follow directionsthen I’m gonna give you a few otherthingsit calls for 360 grams and that’sall-purpose that’s on purpose purpose onpurposeit’s bread flour oh so they’re in theball goes flour and when I say 360 gramsof flour so salt 1/2 3/4 teaspoons andbecause it it goes overnight you don’tneed to use a whole pack of yeast youonly use half a teaspoon and I wouldlike to mix in some sesame seeds YUMjust a little bit of this this is anexperiment I never tried this oh boythis is steel-cut oats we also havewhich I love or the flax seeds becauseclass is good for you it is those areall the ingredients we’re gonna do aquick mixmake sure that at least the yeast getsmixed up and then we’re going to justit’s because it’s overnight we’re andyou don’t want it too hot or it’ll killthe yeast right yeah a lot of times its110 to 115 when I’m doing regular breadthis calls for room temperature okaysimply because it’s gonna sit for 12hours so the yeast will take a long timeto start activating so it’s a cup and ahalf and then you gently mix it it’sgonna be a real sticky dough and thenyou can use a tea towel saran wrap orthis is a beeswax wrap that Doug thanksyes he did make his own beeswaxperhaps oh I want one or two and thenwe’re just gonna set it on the countertill tomorrow morningabout 12 hours you preheat the oven is akeeps the moisture in the bread love itsrisingmm-hmm and it goes for 40 minutes thelast 45 minutes and then 15 minutes forwithout the top one and it comes showyou a picture of that yes oh no we’llsee you in the morning hey there it’s aboy Thursday morning and we’re back inthe kitchen I’m gonna do a little steptwo and three and four to get this breadmade that duck started with us yesterdayso hang on and Doug will be right withus okay here we are we’re at the stagewhere we’re just proof now overnight forwhat was it forced its design so almost17 hoursyou’re like 12 to 18 hours and you’llsee that it’s it’s like double in sizecome back to that but first you put theoven at 450 which I’ve already set theDutch oven just goes in cold come up totemperature when we put the bread I’mgoing to just put it in here to rest sowe’ll keep it shape a little bit becauseit will deflate you want to have yourhands nice and clean please yes I’vewashed themif you can see how it’s kind of pullingaway that’s what you want to see that’sthe yeast at work and we’re gonna justgently flop it into this actually you’llsee that it’s kind of winning flowerside down which is good it says to dothis with egg wash they’re preciousright now so we’re just going to use alow olive oil and we’ve got some plainsesame seeds I’ll just sprinkle some ofthose on thereand black sesame all right this is whywe used this parchment because this is450 degrees there it is in the pot nowit’s gonna go in the oven for the top soI have to tell you I think it’s about 20minutes after don’t put the bread in theoven and I’m working up on the thirdfloor of our home and I can smell itfrom up here it’s been about 3035minutes 35 actually and we’re just gonnatake the top crust off that’s what itlooks like so far it’s looking prettygoodso about another you see it’s a littlesoft in there but another 10 to 15minutes with the cover up will be goodsee in 10 all right we’re back it’s beenabout 10 minutes 12 minutes maybe I’mgonna turn it off we’re gonna take itoutI’m just gonna take it out of it againwhy the papers here hear that sound goodall right I will let it cool down andthen we’ve got bread it’ll be gone bythat[Music]you
