Ube Spanish Bread (Señorita) Bread

Filipino Spanish Bread is a classic and one of the beloved breads in the bakeries here in the Philippines. I’ve seen posts on different social media platforms about this Ube Spanish Bread and I wanted to try making my own as well 🙂 I’m not entirely sure who thought of this idea but whoever that person is, he/she is a blessing ♥ Here’s my take on the Ube Spanish Bread. I actually used the same recipe for my Ube Pandesal dough because that one’s soft and I really liked the texture. The only difference is the filling. I really enjoyed making this and I hope you give it a try as well 🙂

How to Make Ube Spanish Bread
Yields: 12 pcs. of ube Spanish bread
Preheated Oven: 185°C (365°F)
Bake Time: 15 minutes

INGREDIENTS:

~~Classic Spanish Bread Filling~~*Good for 2 batches of Ube Spanish Bread
55 g (1/4 cup) SALTED BUTTER, SOFTENED
135 g (2/3 cup) BROWN SUGAR
32 g (1/4 cup) ALL PURPOSE FLOUR
60 g (1/2 cup) BREAD CRUMBS
78 ml (1/3 cup) MILK
*Whole milk and/or evaporated milk is fine to use

~~Ube Spanish Bread Filling~~ *OPTIONAL
Half of the Classic Spanish Brad Filling (recipe above)
5 ml (1 tsp) UBE EXTRACT

~~Ube Spanish Bread~~
130 g (1/2 cup) UBE HALAYA
420 g (3 1/2 cups) + additional for kneading ALL PURPOSE BREAD / BREAD FLOUR
*Use a scale to weigh your flour but if you’re using measuring cups, DO NOT scoop flour from the container using your measuring cup. Use a spoon to scoop the flour into your measuring cup and use a knife or any straight object to level the flour across the measuring cup.
3 g (1/2 tsp) SALT
100 g (1/2 cup) SUGAR
6 g (2 tsp) INSTANT DRY YEAST
*If you’re using Active Dry Yeast, use the same amount as stated in the ingredients. Dissolve the Active Dry Yeast in lukewarm Milk. Leave it for 5 – 10 minutes or until the yeast foams up or activated.
1 large EGG, BEATEN
148 ml (1/2 cup + 2 tbsp) MILK, LUKEWARM
*Whole milk and/or evaporated milk is fine to use
55 g (1/4 cup) UNSALTED BUTTER, SOFTENED
5 ml (1 tsp) UBE EXTRACT
30 ml (2 tbsp) VEGETABLE OIL
60 g (1/2 cup) BREAD CRUMBS

*Knead 5-8 minutes using an Electric Stand Mixer
*Knead 10-12 minutes by hand (a.k.a. non stop arm workout) I normally do 10 minutes but don’t stress about the timing here. Everyone has different arm strengths
*Sprinkle a little bit (do not use a lot) of flour if your dough is wet / sticky
*Dough should feel smooth, elastic and not sticky
*The weight of my dough always plays around 910-916 g every time I make this. Your dough will differ as well because not all temperature in kitchens are the same and different brands make ingredients differently. Even if you weigh your ingredients, like I always do, temperature and ingredients will factor in on the feel of your dough (this is also why I prefer kneading by hand, apart from the workout thing lol) There will be times where you’ll find your dough wetter sticky, hence the extra flour, and some other times it’s not. So long story short, each dough is unique. If you really want to weigh your dough, just weigh it and divide by 18 or whatever number of pieces you prefer.

1st Rise: 1 – 2 hours
Proof: 30 minutes
