Let’s bake potato bread!

Homemade Potato Bread

Makes 2 loaves

2 cups whole milk
1 cup leftover mashed potatoes (Russet or Yukon gold)
2 tsp kosher salt
1 tbsp honey
1 envelope active dry yeast or instant yeast (2 1/4 teaspoons)
5 cups all-purpose flour
Extra-virgin olive oil, for brushing

In a saucepan, combine the milk, potato, and honey. Warm over medium heat, stirring to combine.

Transfer the mixture to a large bowl or the bowl of a stand mixer fitted with the paddle attachment. Let cool to 110F. Add the yeast and stir to combine (let sit for 10 minutes if using active dry yeast, otherwise proceed). Add about 3 cups of the flour and the salt. Beat with a wooden spoon or on medium-high speed until mixed together, about 2 minutes. Add the rest of the flour. Stir until the ingredients are mixed, then dump the dough onto a floured work surface and knead with your hands or use the mixer to knead the dough until it is smooth and slightly sticky, about 8 minutes.

Cover the bowl with a damp towel and set in a warm spot until doubled in size, about 1 hour.

Grease 2 loaf pans with cooking spray. Dump out the dough onto a flour-dusted work surface. Divide the dough in half. Press each half into a thick square the length of your loaf pan, then roll up into a tight log, pinching the seam together. Place each dough piece into a loaf pan seam side down.

Brush the top of each loaf with a little oil, then cover loosely with a damp kitchen towel or plastic wrap. Set in a warm place until the dough doubles in size and looks puffy, about 45 minutes.

About 15 minutes before the dough is ready, preheat the oven to 350°F. Remove the plastic wrap or towel. Bake until golden brown, about 35 minutes.

Transfer to a wire rack and let sit for 10 minutes, then turn out onto the rack. Turn the loaves right side up and let cool completely before slicing.

[Music]welcome hi my name is poppy and this ismy mom California what are we makingtoday poppyhe’s pretty spread we had a lot ofrequests for yeast breads so we’re gonnamake mashed potato bread whatingredients do we need today flourthis is all-purpose flour but you coulduse bread flour if that’s what you havesalt mashed potatoes from our dinnerlast night you can use any kind ofmashed potatoes if you don’t have mashedpotatoes you can take a baked potato andsmash it up with a fork just as long asyou have about a cup of potatoes honeynow and the star ingredient yeast youcan use either instant yeast or activedry yeast and we’ll show you how to useeither one okay okay all right so thefirst thing we need to do is warm up ourmilk with the potatoes and honey so youneed 2 cups of whole milk if you have itif you only have 2% milk that’s fine tooall right and then you can throw thosemashed potatoes in there well don’tthrow them actually cuz I’ll getsplattered with milk okay it stillhappened so then we need 1 tablespoon ofhoneyhoney breathe your hand if you likefunnywe’re big honey fans yeah it doesn’treally matter just stick it in therehere let me get actually very hard to doit’s very cool it’s super stickyit’s superstitious stickiest yes you’reonly adding a little tiny bit of honeybecause yeast likes to eat honey and ithelps the yeast get all excited and wantto party okayI don’t blame you honey too funny is itokay so now we’re gonna take that overto the stovetop and we’re gonna warm itup so let’s take it over all right solet’s turn it on to medium there you goand kind of stir that together with yourfavorite wooden spoon of course or aspoon or a whisk even heat this up untilit’s steamy and then we’ll turn it offand we can take it back over to our workstarting station okay so we’re justgonna pour this into a mixing bowl youcan pour it into the bowl if you have astand mixer or if you don’t you can justpour it into a mixing bowl and let’stake its temperature okay because whenyou work with yeast it has to be a veryspecific temperature how hot is it rightnow 128 so that’s way too hot for yeastyou want it to be between 105 and 115degrees Fahrenheit otherwise if it’s toohot your yeast will die and if it’s toocold your yeast doesn’t is stillsleeping and it won’t wake up so we’regonna wait until it gets to 110 degrees[Music]so you can just use a big whisk if youwant to kind of whisk it and cool itdown that helps cool it down and let’stake its temperature again what does itsay puppy perfect so now we can add ouryeast so there’s two kinds of yeastthere’s active dry yeast and there’sinstant yeast if we are using active dryyeast we’ll add that right now that’swhat we’re going to use just because Ithink it’s cool and we’ll cut that up inso you can sprinkle that in so if youuse active dry yeast you need to addthat to your warm liquid which is ourmilk between 105 and 115 Fahrenheit andthen we’re gonna give it a little whiskand that will activate the yeast so wehave to activate it if you’re usingactive dry you can get the name but ifyou’re using instant you could just pourthat in and then start adding your flourimmediately but we’re gonna give itabout 10 minutes and then we’re gonnasee something really cool yeast actuallyfeeds on the milk and then it like fartsand it blows up dough it’s true that’show bread Rises it’s all it’s all theyeast parts yesjust the yeast farts it’s actuallycarbon dioxide yeah but but it’s usefarts so you’re just so the yeast isalive did you know that I know that it’salive and it goes in there and it eatsand it likes sweet things it likes themilk because that’s sweet and it likesthe honey cuz that’s sweet and so it’llstart eating and it’ll start bubbling upand farting and it’ll be so great andthen we’ll add the flour and I’ll haveeven more to eat alright so it’s beenabout 10 minutesand it looks like a foamy latte mm-hmmso you can see little bubbles and thingsso we are going to add our flour we needfive cups of flour but you only need toadd maybe about half so maybe I’d likethree cups of flour now and we’ll startmixing it okay all rightokay so so you want to use your doughhook if you’re using a stand mixer stageshe has a pirate actually and if you’redoing it by hand you can use a woodenspoon where it’s probably not good forjust a handheld mixer because the breaddough is quite stiff so I would sayeither doing a stand mixer or he’s atwin spoon yeah so put your dough hookon all right and then we’ll turn it onto low to start just to get it all mixedinwanna make that nice happy and then oncethat’s mixed and how many did we addthree three hatswe’ll add two more cups and twoteaspoons of salt so you can go aheadand start adding the salt and all therest[Music]so you want to let it go until it’s allmixed and then we’ll turn it up tomedium and then we’ll let it need forabout 8 minutes or sookay so if you don’t have a mixer youcan stir the dough in a bowl until itall comes together and then pop it outonto your work surface and knead it byhand and to knead it you just want tokind of pick it up and spin it a littlebit and push it back down on itself andyou’re going to need to do this forabout ten minutes until it’s nice andsmooth and it feels like a marshmallowlike that all rightit’s been about eight minutes and Ithink our dough is ready so it’s muchsmoother and it’s pretty sticky doughit’s warm so you just want to scrape itinto the bowl and we are going to knowthe dough’s already been yeah okay sowe’re just gonna cover it with a dampkitchen towel and then we’re gonna putit in a warm spot and we have it likeyeah put it in a turned off oven that’sa great place to put it and then makesure you have it so on and we’re gonnalet it rise for about an hour until it’sdoubled in size okay see you in an hourokay we’re back it’s been about an houryepand it’s time for the grand revealingwhoa ha ha look about bread look coolhuhyeah it’s like exploded it looks like ahot-air balloon or a bouncy ballbut what farts inside the air okay so weare going to dump it out onto the worksurface it might be a little sticky soyou might have to just grab it don’tworry if it deflates a bit that’s fineWow look at all that dough okay okayokay so get a knife or we’re using abench scraper and cut it in half as bestyou can good way to know if it’s equalis to use this which is what which is ascaleyeah scale okay so what is this one wayit weighs one pound getting nine ouncesgreat okay so what is that one way yeahso we want to maybe just take a tinylittle blob yeah just like that muchmaybe stick it on here so you want tohave two 9 by 5 inch loaf pans and justspray them with a little cooking sprayand then you want to take one and I’lltake the other you don’t need a rollingpin for this you can just take it put itin front you okay and then just kind ofmake it into a square that is you canlike pull it like lift it and pull itjust so it’s only as wide as your asyour baking pan okay so put the bakingpan in front and then you can sort offigure that out okay and you want usmaybe stretch it out a little bit so itlooks kind of like a square it’s warmlike a marshmallowokay and then you’re just gonna roll itup like thisreally tight like that and then smashthe seam together like that you smashthat together when it comes and thenyou’re gonna take your loaf pan okay andyou’re gonna turn it over so it goesseam side down and stick it in thereokay here it’s a long key piece of breadit won’t a wonky bread and then justpress it down with the palm of your handso it fills that space in there okay andthen we’re gonna brush the top with alittle bit of oil olive oil or avocadooil or whatever just a little on the topmake sure you get all all over and we’rejust gonna lay our wet towel over thetop and then we’re just gonna let itrise until it’s nice and puffy probablywhat depends on how warm your kitchen isbut probably I would check it in half anhour and then 45 minutes then an hourcuz it might take half an hour it mighttake an hour okay see you in a littlebitokay so it’s been about 45 minutes andabout half an hour and you want to setyour timer to your oven your oven to 375degrees Fahrenheit and when they’reready they’re gonna be super gentleso they’ve risen up just above the rimof our loaf pan and we’re gonna put themin the oven now okay okay you do it theywill not like thatthey love that yeah it’ll rise up andbake okay bake well little breads youwant to hear joke yeah I want to hear ajoke we have a not a joke yet what isthe most powerful potato in the galaxyno idea Darth tater hey welcome backyeah our bread smells so good yeah Ithink it’s done it’s been 35 minutes sowe’re gonna take it out of the oven okayget some hot baths and whoo you knowyour bread is done when it smells greatand it looks really nice andgolden-brownso put that up there like that we havewacky hair now yeah okay so it’s beenit’s been like 10 minutes and we’regonna turn these out and then let themcool so you want to flip them over sothey can cool a little bit and you don’twant to cut into them until theyactually cool off quite a bit like maybea little bit warm but well if you cutinto them when they’re really hot allthe steam will come out and then theywill dry out yeah so we’re gonna letthem cool and then we’re gonna come backand we’re gonna cut a piece and we’regonna yeah me okay the bread is cooledand we get the do at the end or do youwant to you want to end pieceoh you want to in peace can you see thatit’s still a little bit warm we
