Keto Cooking with Leon and Rob – Episode 02 Yeasted Keto Bread

Want to learn how to cook KETO? Whether you are a cooking Novice (like me), a professionally trained chef like Rob, or something in-between, follow our step-by-step guide to Keto (ketogenic) friendly meals and food items. In this episode we make a traditional looking and tasting bread, the Yeasted Keto Bread.

If you are new to the ketogenic diet you may think that you are stuck eating nothing but eggs, meat, cheese, and nuts while missing out on all the fun foods that your carb indulging friends enjoy on a regular basis. On Keto Cooking with Leon and Rob we aim to help individuals of all cooking levels learn how to prepare a variety of keto friendly meals to help increase your meal options while enjoying the health benefits of the Keto Diet.

As a complete cooking novice I ask the questions many of you may have while watching other cooking segments as I am as overwhelmed by some elements of cooking as many of you at home. We aim the episodes to be accessible to everyone, including those that may be cooking for the very first time. RECIPE:

Yeasted Keto Bread
Servings: 20 slices

Ingredients

1 cup warm water, between 100º – 110º
1/2 teaspoon of honey
2 teaspoons of active dry yeast
2 eggs room temperature large eggs
½ teaspoon sea salt or kosher salt
80 grams golden flax meal
50 grams oat fiber (50g)
180 grams vital wheat gluten flour (180g)
70 grams butter at room temperature (70 g)

Instructions
Mix honey and yeast into water and let stand for 5 min until it becomes thick and frothy.

Add all ingredients to stand mixer, including activated yeast. Using dough hook attachment knead dough for minimum 5 minutes (dough will be smooth, soft and supple and not wet) Note: you can do this step by hand but it will require some time and will give you a workout. The kneading time will triple…so god speed.

Shape into a ball, place in a bowl and cover. Let rise in a warm spot for 1 hour.

Once dough has about doubled in size, remove it from the bowl and gently kneed it for 10 seconds, then shape into a loaf and place in a loaf pan that has been sprayed with a little cooking spray.

Cover loaf and let rise again in a warm place for approximately 1 hour until loaf has risen.

Preheat oven to 350° Bake 40-45 minutes. Cool on wire rack.
