PAN DE COCO also known as COCONUT BREAD. A traditional Filipino soft buns filled with sweet desiccated or fresh coconut. These coconut buns are perfect for breakfast, afternoon merienda/snack or just about anytime you want. Good combination with coffee or tea.
Ingredients
500 g bread flour
500 g all purpose flour
2 tsp salt
160 g sugar
1/4 c veg oil
50 g unsalted butter
1 whole egg
300 ml water
300 ml whole milk
(lukewarm)
4 tsp instant dry yeast
sweetened coconut
(for filling)
