[Music]hi guys welcome to my channel a yummyfood welcome loved Ian and the Viragealways today I want to show you one ofmy favourite Latvian desserts it’s sogood it might sound a bit crazy andbizarre to you but it’s very sort ofsame thing as in England you guys havebread pudding this is like rye breaddessert opening and it’s actually verydelicious it’s a rye bread that’stoasted with spices and cinnamon andthen served with layers of mascarponeand cranberry and it is so deliciousvery unique and I promise you it willimpress your friends and guests or whoare you meeting this for so let’s getstarted and I hope you enjoy this videoin a bowl add mascarpone cheese togetherwith cream cheese and I love this youknow cream you can use this pretty muchfor any desserts that you have and thenwe’re gonna add vanilla extract and mixeverything together I’m also adding alittle bit of icing sugar and this iscompletely up to you how sweet you wantthe Queen to be I suggest adding atleast 3 tablespoons but you can also addmore if you like you so mix everythingtogether until it’s nice and smooth andthen transfer it into a piping bag witha star nozzle this will ensure an easysort of dessert presentation because I’mdoing it in cups if you’re not doing itin cups you don’t have to put it in apiping bagas some of you know I have launched myonline cooking school where you canlearn how if you have any morequestions then leave the comments downbelow next thingtake your right black bread so this isvery dark rye bread you can find this inhealth stores or you can find this inyour local supermarket where you liveand ideally you want to even use theRussian or Latvian a Polish type ofblack rye bread it’s a bit softer andtastier but this version works well tooso add your rye bread in a foodprocessor if you don’t have a foodperson you can chop it all up by handsbut having a food processor makes thisjob so much easierand then you want to add sugar andcinnamon and I’m gonna blitz everythingtogether until you get nice beautifullittle crumbs that are mixed in togetherwith sugar and cinnamon once yourmixture has been done it should lookjust like that and it will smell amazingalready because of the cinnamon add yourbread crumbs into your pan and make sureit’s nice and hot you want to cook thisfor 5 to 10 minutes depending on to yourstove or your panand just keep mixing the mixture withthe wooden spoon so it doesn’t burn youwill really start to smell the sugarcaramelizing together with cinnamon andit will fill your house with thatdelicious flavor and smell honestlyyou’ll love it alreadyso because the bread has a lot ofmoisture and wetness we want to kind ofdry it out so this process might take awhile but just keep going until youreach this sort of stage and it becomesquite sticky and you know brown brown incolor so then it’s done it’s dried outcompletely it becomes nice and crumblywe want to add this back in a foodprocessor and let sit together until thecrumbs become even finer so if you havea really good project process that itwill become he’ll make it look like adust but my food process is it’s goodbut it’s not that you know strong butI’m really happy with that you can seethat the bits have become even smallerhere I’ve got cranberry jam and I dosuggest using cranberry Jam becausethat’s the traditional way and also kindof balances out the sweetness of thedessert angyeo rye bread cinnamon crumbsinto each sort of plates or a cup andthen pipe the cream on top and this justmakes it so much neater when you pipe ityou see you don’t damage the glass thenadd a couple of teaspoons of yourcranberry Jam inside and just spread itaround you then want to kind of goaround and do the same and then repeatthe process by adding more crumbs on topon each to size you can do as manylayers as you can or as you want in factminimum two layers and so I’m addingmore cream on top and then I’m gonna addmore cranberry jam on top as well andlike I said if you have a sort ofthicker dishes or bigger cups you canadd more layers as you wish I’m onlydoing two layers herethen I’m decorating it with fresh mintand it’s doneplace them in a fridge if you want themto set for at least half an hour andthat’s how it looks when it’s been niceand set and they’ve really soakedthrough the bread so I do recommend evenleaving it for a few hours it’s sodelicious guys so creamy crunchy andsort of cinnamony and you get thatcranberry jam that gives it sournessit’s one of the most yummiest dessertsyou’ll ever make trust me on thatenjoy[Music][Music]
