How To Make Bread Rolls at Home | Episode 39

My guide on how to make bread rolls at home.

We just love our bread rolls in this household. My mother used to say if you’re hungry, have a bread roll, and we all became slightly addicted. My bread maker is very old, at least 19 years, but it’s given me very good service. I do not cook my bread in the machine, I use the dough setting. This is so I can make rolls and it goes further. If I make a loaf, it will go in one day, so making bread rolls makes the bread last two days. By using the machine this way, you can experiment and make hot cross buns, panettone, Chelsea buns or focaccia. Out of all the gadgets I have, I think the bread maker is the one I use the most.

Ingredients:
– 300ml Warm Water
– 2tbsp Rapeseed Oil
– 1 1/2tsp Salt
– 25g Sugar
– 30g Butter/Margarine
– 430g Strong White Bread Flour
– 70g Wholemeal Flour
– 2tsp Fast Action Yeast

Method:
1) Add the warm water, oil, butter/margarine to the bowl.
2) Add the salt and sugar.
3) Add the flours — the total of the flour needs to be 500g, mess around with the weights to get your perfect mix.
4) Add the fast action yeast.
5) Put your bowl in your bread maker, set on the dough setting. On my machine, it’s 6 but they do vary. It usually takes about one and a half hours. This gives you the mix and the first prove.
6) When the programme has finished, pull your dough out onto a floured surface and knead for about 10 minutes. The dough will change in texture and have a smooth feel.
7) Divide into eight rolls.
8) Roll between your hands to form a ball.
9) Flatten slightly, put on a baking tray lined with baking parchment.
10) Once all eight are done, leave to prove for a second time until doubled in size. I just put mine in the oven with the light on, it seems to give just the right amount of warmth to make the bread rise.
11) Once risen bake at 200C/Gas 6 for 20 minutes.
12) Cool on a wire rack and they are ready to eat. Or have hot with some butter and cheese, one of the best lunch treats you can have
