2 1/2c sifted all purpose flour
1 tsp baking soda
1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 c softened butter
1 c sugar
1 c molasses
3/4 c hot water (need for later, so get a kettle slowly boiling)
1 c heavy cream
2 tbsp confectioners sugar
1 tsp vanilla extract
Preheat oven to 375.
Grease & flour 9×13 pan
In a large bowl mix cream the butter and sugar. Once combined well, add the eggs. Beat the mixture until light and fluffy.
Add in the spices, salt, and baking soda and mix until combined.
Slowly add in some of the flour. Mix until combined. Repeat until all flour us added and mixture if very thick. The flour does not have to be completely mixed in.
Heat water and pour ¾ c. hot water into a bowl with the 1 c. molasses. Mix well.
Pour molasses mixture into the dry mixture and stir until well combined.
Quickly pour batter into prepared pan and bake for 35-40 min. Until a toothpick is clean after being inserted.
Cool on a cooling rack.
Serve with cool whip or whipped cream.
1 cup cold whipping cream
2 Tb. Confectioner’s sugar
1 tsp. Vanilla extract
Combine all ingredients in a large bowl.
Slowly incorporate the confectioner’s sugar into the whipping cream.
Begin to whip/beat the mixture on high until it is thick and is at the consistency you desire. The thicker the mixture, the better it will hold up.
Refrigerate any leftovers.
