How to bake sourdough bread (the imprecise way)

Recipe:
500 grams flour (450g bread flour, 50g all-purpose flour)
325 grams water
100 grams levain (sourdough starter)
10 grams salt

– Mix ingredients (except salt)
– Rest 20min
– Mix in salt
– Knead 10min, rest 10min, knead 10min again
– Let rise:
– 5-8 hours room temperature or,
– Overnight in fridge
– Preshape (letter-style fold once, turn 90 degrees, and letter-style fold again)
– Final shape (same as preshape, but round of by sliding dough between hands)
– Rise 3 hours
– Preheat oven to 500F (with cast iron dutch oven inside)
– Bake for 45min with lid on
– Take lid off for last 5-10min of baking
– Allow bread to completely cool off before cutting into
