EASY AND LOW SODIUM PANDESAL
INGREDIENTS:
4 cups all purpose flour I also added
1/4 tsp salt
½ cup sugar.
Combined all these ingredients in a bowl set it aside
FOR YEAST:
3 tsp dry yeast
½ cup water warm (105F°)
1 tsp sugar
WET Ingredients:
1/4 cup warmth milk ( not too warm )
1/2 cup water
5 tbsp MELTED unsalted butter
1 tbsp oil
Mix all wet ingredients
**Plain Bread crumbs for rolling dough
Method:
combined water, sugar and yeast together, mix well set aside and wait 7-10 mins or until foamy.
meanwhile, melt the butter in the microwave for 30 seconds.
after the butter is melted, beat the egg, combine warm milk, and water, add in egg, butter and cooking oil into the milk mixtures and whisk to combined.
now that the yeast is ready and beautifully foamy, mix sugar into into the flour stir to combined.
Method using mixer:
where going to use the regular hook to mix this pandesal. first,
Pour all the wet ingredients to the machine bowl including the yeast mixtures,
‘then gradually add the dry ingredients and turn on the mixer to pulse for few seconds and then let the machine do the work for you. Let it mix to low speed for a minute then scraped down some dough or dry flour off the side of the bowl mixer then continue mixing for 5 mins on 3rd speed settings.
In the mean time, brush a glass or stainless bowl with vegetables oil deep enough making sure that the dough wont over flow while its proofing.
Once dough is kneaded well, after 5 minutes, and is looking smooth, , transfer the dough to a prepared bowl (dough will be really sticky, so rub your palm with a little oil ok? ) cover with cling wrap over and a towel then put it in a warm place or better yet inside the proofing oven for 2 hours.
After 2 hour and dough had doubled in volume, take the cling wrap off the top, let the air out by poking it with your fingers and knead the dough right inside the bowl by turning into a smooth ball.
Turn the dough onto a lightly floured surface and divide into 4 equal pieces. divide each piece again into 6 balls, about a size of a golf ball, roll each ball into a bowl of bread crumbs and place them on a pan sheets. you should have a total of 24 pieces all together.
once done Cover again with cling wrap and towel over and place it in a warm place and allow to rise once more for 30 mins. 10 mins before the timer is done, turn the oven to 375 degrees F° and bake pandesal for 12-15 mins or until the top is golden browned.
serve with your favorite jam, butter or simply eat it as is.
