I’m back in the kitchen! I have not made cornbread in years mainly because I do not eat bread often. Also, I had concerns about sugar and oil in the bread. But since I found a recipe in the Physician’s Committee for Responsible Medicine’s Vegan Thanksgiving Guide, I went ahead and tried out that recipe. I wasn’t too happy with that result.
Chef Julia Dunaway has a wonderful and simple recipe that I used. Next time I make this cornbread I will use diced jalapenos.
