Do you like something unusual? Bake a Toffli bread (vegan + glutenfree) with yeast water

Today I will show you a very unusual bread, a so-called Toffli bread, of course with our yeast water.

340 g wholemeal rice flour, alternatively rice flour, alternatively cassava flour
140 g potato starch, alternatively tapioca starch, alternatively rice or corn starch
12 grams of salt
20 g apple cider vinegar, alternatively verjuice, alternatively rice vinegar
300 g natural yogurt, alternatively a plant-based yogurt alternative
1 pinch of bread spices (can also be left out)
110 g mashed potatoes
210 g milk or vegetable milk
110 g of water
100 g yeast water

Preheat the oven to 250 ° C top / bottom heat and place a bowl of water on the bottom of the oven. When the bread is pushed in, it is briefly sprayed with water again and then baked for about 15 minutes. Then turn the baking temperature down to 190 ° C and bake it for another 50 minutes. Then let the toffli bread cool completely on a rack before you cut it.
