Easy Fish Soup:
Great for Lunch or Dinner!
Feel free to cut the soup recipe in ½ because we’re cooking for a 6 person family
5 Stalks Washed Celery (chopped into bite sizes)

1 T. Olive Oil

1 T. Salt

½ t. Pepper

2 T. Onion Flakes

1 t. Ground Tumeric (adds an extra meaty note to broth)

8 Cups Water

2 Extra Large Carrots cut in bite sized pieces (horse carrots lol!)

4 Frozen Fish Fillets Cut (Use fish of choice – we used Sole here)

2-3 Cups of Cooked Grain of Choice (Rice, Lentils, Barley, etc)

– In large soup pot fry celery with oil for 5 min. Stir occasionally. Add S&P and Spices cooking for 1 min. Add Water and stir, place on lid and bring to a boil. Add Carrots, place on lid, bring back to boil then turn down to simmer for 5 minutes. Add Fish pieces and cook Uncovered for 5 minutes (I like turning the heat up again to bring the fish to a proper boil). Taste. Add more salt and/or pepper to if needed.
– In each person’s eating bowl scoop the amount of grain in. Then, ladle soup into bowl on top of grains. (I do not like adding the grain to the big pot because they absorb the broth and go soggy/overcooked)
– Enjoy! Goes great with Bread (recipe below) or Flatbread (See Caleb’s Cooking video https://www.youtube.com/watch?v=tLLFHoweZWc )

Bread, Rolls and Pizza Dough:
5 1/2 Cups All Purpose Flour
2 Cups Whole Wheat Flour (Or use just All Purpose if you like)
2 Cup All purpose Flour (in reserve)

3 t. Salt

1 ½ Cups warm/hot milk
3 t. Yeast
1 ½ Cups warm/hot water
Bosch or KitchenAid Mixer with Dough Hook

– In Mixer measure out Flours and salt and mix (keep reserve flour separate for now)

– In 4 Cup Glass Measuring Cup pour Milk (I use milk instead of only water and sugar traditional bread calls for…less sugar is easier on my body/health). Heat in microwave for 2 min. Add yeast quickly and whisk for 1 min. Set Uncovered in a warm place for 15 min.

– Add Warm/hot Water. Whisk for 30 seconds.

– Take lid off mixer. Turn mixer on to low speed and pour Yeast liquid in QUICKLY. Place Lid On and turn up mixer to Medium. Stand nearby during mixing time so Mixer doesn’t DANCE of counter (I often put a wet Hand towel under the mixer to help fix it in place). Knead dough for 10 minutes.
(If you have a No-Lid mixer you may want to add the flour and Yeast liquid interchangeably to avoid a POOF of flour onto you and the counter lol)

– Remove Lid and dough hook. Gently move dough evenly around the machine’s bowl then Cover with 3 tea towels and put in a very warm location for 1 ½ hours.

– Prep pans.
– Waiting…drink a coffee….waiting…clean house….waiting…
– 1 1/2 hours LATER….For rolls I often use 2 9×13 glass pans. Oil pans with a high heat Oil. Then flour pans by dumping reserve flour in pan and rolling it onto every surface. Pour excess flour into next pan then leftover flour into separate bowl for a future project.
– Uncover dough…risen to at least twice it’s size by now…punch dough 3 times with fist (FUN!).
– Shape dough. For Small Dinner Rolls pinch off 2 inch amounts and shape balls pulling outer edges of dough to the bottom of the roll. For Larger Rolls make 3-4 Inch Balls. Place into pans, not touching any surrounding rolls.

– Cover with towels, place in warm area again and rise for 45-60 min.
– Preheat oven to 400F

– Place pans in oven on 1 rack.

– Toss in ½ Cup of tap water OR place heat safe cup of hot water on rack below and Shut Oven. DO NOT OPEN THE OVEN DOOR. Bread rises better with STEAM.

– At 25 minutes Turn oven light on and peek.
– TIP: Small Rolls will cook faster than large rolls than loaves of bread. For Example: Small Rolls (25 min), Large Rolls (30 min), Loaves of Bread (40 min).
– After 25 minutes open oven and see if they are browned on the bottom…if not return to oven for 5 more minutes.
– Remove from oven. Tip Rolls out of pan (DO NOT COOL IN PAN. Bread bottom will go soggy) and place on cooling racks.
– Enjoy with just Butter, Soups, Sandwiches, etc.

(For PIZZA DOUGH – after dough rises the 1 ½ hours, prep 2 cookie sheets as above. Break of 10 inch mounds and toss and move dough around in (olive oil covered) hands to thin dough. Place thinned dough crusts onto 2 prepped cookie sheets. Place tea towels on top and rise for 30 min. Brush olive oil on top of crusts. Preheat oven to 400F and bake crusts for 15 minutes. Remove from oven. Top with sauce, toppings and cheese and return to oven for 15 more minutes. Pizza! Yum!
