Sunny’s Brunchy Bread Pudding

Yield: 4 to 6 servings

Ingredients

1 tablespoon olive oil
4 links chicken sausage
1 cup heavy cream
1/2 cup whole-fat Greek yogurt
2 large eggs
Zest and juice of 1 orange
3 tablespoons cinnamon sugar
2 tablespoons unsalted butter
6 slices bread, toasted and cut on the diagonal
1/2 cup maple syrup
1/2 teaspoon fennel seeds

Directions

Preheat the oven to 375 degrees F.

Add the olive oil and sausages to a large pan on medium-high heat. Cook, turning sausages occasionally, until cooked through, about 10 minutes. Remove to a paper towel-lined plate. Cool until cool enough to handle, then chop. Set aside.

Add the heavy cream, yogurt, eggs, orange zest and 2 tablespoons cinnamon sugar to a large bowl. Stir until everything is combined.

Butter the bottom and sides of an 8-inch square baking dish. Spread the chicken sausage in the bottom of the dish. Shingle the toast on top, overlapping each other slightly, then pour the custard over. Sprinkle the top with the remaining tablespoon cinnamon sugar. Bake, covering with foil halfway through, until golden and bubbly, 30 to 40 minutes.

Meanwhile, combine the orange juice, maple syrup and fennel seeds in a small pot on medium heat. Cook until reduced back down to a syrup consistency, 10 to 15 minutes. Strain out the fennel seeds and serve with the bread pudding.

I’m gonna make a sweet and savorybrunchy bread see what I love for you todo is if you could first please hook upmy bread just cut it six pieces of itslice it into triangles SiC trianglesand get it onto my rack here I’m gonnamake the custard that really flavors upthe entire bread pudding I’m gonna usesome heavy cream there it is you know itand then I’m gonna get in some cinnamonsugar which is now at the top of my racklike it’s salt pepper cumin cinnamonsugar Hungarian paprika and katie’sgarlic salt I use it all the timea couple of eggs go in so g zygluten-free bread well my why not mydaughter and my wifeare gluten free so we have it all thetime and you know we use a lot of it andit’s actually quite good yeah that’sgood better man 2 okay so if you don’tmind taking that into the top oven andthen bring the other ones back we’vealready toasted some but we like to eata crowd here at the kitchen so we’regonna toast these we go make sue and eat- yeahso yeah bring those bread toasts pointsback I’m just gonna get some of theorange zest off of your orange you knowthat’s where all the good flavor ofboiled oranges and I’m gonna get it intothe bowl here now before we started Ihooked up your sausage all I did wasjust like serum down in a pan if youdon’t mind taking them out chopping themdown shot what do you want to put themso I’m gonna put them in the bottom ofthe eighth by just buttered up so it’sgonna be on the bottom of the custardand the bottom of the bread pudding andjust kind of cut them in the way whereyou’re like I can get this and a pieceof bread on the fork at the same time sonot too big but not too small a sausagecrust yeah down bottom no is it chickenbreakfast sausage or chicken – tell meor just chicken sauce chicken Italian ohall right so remember this is the heavycream cinnamon sugar orange zest coupleof eggs pass me that Greek yogurt Jimmyif you don’t mindgetting the juice out of those orangeguys and that’s gonna go into the syrupwhat are you talking I love the idea ofincorporating the yogurt into theaccustomed oh I do that a lot[Applause]look at you talking about coding no it’sfor me it’s about the flavor the zip andthe viscosity it comes through nice andthick it would be kind of like addingsome buttermilk yeah it sure wouldgiving you that tang I’m just gonna getthis into my 8×8 and remember this isbuttered got Jeezy’s chicken sausagedown I’m just gonna go in with my toastthe reason I toasted is usually peoplewhen they’re making bread pudding theytalk about using that day-old bread wegot time for that I’m making a day-oldtoday Johnny you want it that’s it yeahput in your toaster oven or you can justput it on a wire rack like this in youroven and get it nice and toasty and likeI said just get the custard right overthe top Oh thick and velvety that isfrom yogurt total viscosity breakdownyeah the eggs come through with that andit’s good I could smell all that orangezest in or where’s this really goes alot of work in that so what you want todo is get this into the oven I like tosprinkle the top with a little bit ofcinnamon sugar like the top of a muffinyou know it is like the top of a muffinall right so I’ve got the oven at 375degrees this takes about 3035 minutes sostart it uncovered and then when youstart to see it golden brown cover it sothe rest of it starts to bake yeahcan you soak this overnight I mean youjust ahead of time you cook well Iwouldn’t do it like overnight but youcan kind of like do it in the morningand then have brunch with your girlsaround noon you know what I’m sayingthat bread might have a differentreaction soaking up all that clusterbecause it is gluten free so you don’thave to flour the grain you that’s whatyou’ve done hang out for a secondI will reveal it once we make the syrupthat is also inspired by GZ now do youthink you should love this okay can’twait you always pick on me for yes it’slike you’re a chicken stock it is I loveeverything about you and everything yeahI mean it’s boringsweet it’s the broke man’s you knowwhite wine vinegar you know pain vinegarso remember a few years back Jeezy madea maple syrup that he steep was justsimply rosemary and it was like superdivine and I know GZ you love fennel inyour sausage so I’m just gonna put somefennel and some maple that ties in rightwith this chicken sausage yep and thenI’m gonna add in that fresh orange juicegreat idea and then just a little pinchof salt you’re gonna stir this up andthen just let it cook down until it’sback to that syrupy consistency thatmaple syrup has just like that I seewhat you’re gonna do I mean it can’t beit has to be delicious the fennel andthe orange is such a magical mmmcombination really you can put that in acocktail that’s what I was just thinkingoh harbin are you that good it’s ananise from the fenneloh man Oh all right GZ I hope I did yourgrocery shopping proud good this is mychicken sausage bread drizzle everythingmaples that is beautiful sunny and thenjust go in this could be like abreakfast for dinner well this is likesuch a great brunch dish you just putthis out and people just tell them andthere’s like surprise sausage on thebottom prize always a good thing youknow I saw you do it and I’m likethere’s not enough batter you need morebatteries let me get dry not dry it’sperfectnow I cannot believe that what I gaveyou you turn into this this is asensational dishit is both light floral sophisticatedand you can have it any time of day thisis just deliciousyou
