Baking Bread in the Updraft Kiln

My wife put this dough together so we could bake some bread in the updraft kiln to celebrate our anniversary. It was a delicious success. Simple ingredients, just flour, water, salt, and a little baking soda, but it came out with a complex smoky flavour. We set a large fire in the kiln to get it heated up, then once it burned down to the coals and cooled down to a nice baking temperature we put the dough directly on the preheated clay grate. We kept a few coals smouldering in and just outside the firebox entrance, and covered most of the top to retain heat, but left a few small openings so that the updraft effect could work in the same way as a convection oven. It turned out better than we expected. A crispy crust on the bottom with a soft top and thick fluffy centre, I think we discovered a new favourite tradition. So many possibilities to explore. Can’t wait to cook some more food in this kiln, but first I need to fire pottery in it Check out the next one to find out how it went.
