Quick crust red or quick farmer’s bread is super easy to make. With a few small twists, you can bake BREAD IN AN HOUR and all without sourdough.

500g flour (caution: even if vinegar is included, I recommend acidifying rye flour)
A packet of yeast (7g) also works with 20g fresher, but then the dough has to rise longer
2 tbsp bread spices (1 tbsp coriander, caraway, fennel & 2-3 star anise each)
1 tbsp sea salt
3-4 EL Balsamic Essig

Version of the liquid from the video
150 ml of beer
150-170 (depending on the flour) ml VERY warm water
1 tbsp brown sugar

With baking malt:
300-320 ml water (depending on the flour)
1/2 THE Backmalz
1/2 tbsp brown sugar

With barley malt syrup or something similar:
300-320 ml water (depending on the flour)
1 1/2 THE Malzsirup
