**************Almost Gluten-free, 3 Cheese Savoury Loaf************
*Pre-heat oven at ‘medium’.
*Into a biggish mixing bowl toss a good cupful of milk (preferably goat’s if you can catch one, but sheep’s or cow’s will do as well).
* Add a small punnet of plain yoghurt (Greek is best, but no matter).
* Wash 2 eggs and crack in
* Stir in 2 ample teaspoons of medium-hot mustard (any nationality).
* Sprinkle 1,5 teaspoons of sea salt (with added herbs and vegetables, if in shops).
* Pepper to colour.
* Add in a (big) walnut size of grated Red Leicester cheese, or similar
* Stir in gradually 175 gr each of Buckwheat flower and Oat bran, till tacky and only just pourable.
* Sprinkle over: one teaspoonful of yeast (fresh, if your baker’s a free-thinker).
* Stir semi-furiously and pour the mix into a bread tray (as in photo).
* Slice thinly a dozen slivers of Comté and mature Cheddar (6 of each) and add as topping.
* Place in middle of oven at ‘high’ and bake with timer for 35 minutes (38 mins for well-browned).
Remove at bell and enjoy for 3 to 5 days (3 average Lockdown appetites).
No knead to need, so very simple—will allow more time for watching videos!
