Chocolate Chip Banana Bread

Ingredients

3 tablespoons melted and cooled coconut oil, plus more for the loaf pan
3 very ripe bananas
1 large egg
3/4 cup unsweetened almond milk
3/4 cup coconut sugar
1/3 cup roasted almond butter
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 cup almond flour
1 cup rice flour
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/2 cup bittersweet chocolate chips
1/2 cup chopped walnuts

Directions

Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.

In a large bowl, mash the bananas with the back of a fork until only a few lumps remain. Add the egg and mix until smooth. Using the fork, whisk in the almond milk, sugar, almond butter, coconut oil, vanilla and salt until smooth and incorporated. Add the almond flour, rice flour, baking soda and cinnamon and stir until combined with a rubber spatula. Stir in the chocolate chips.

Pour the batter into the prepared loaf pan and sprinkle the walnuts on top. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs, 1 hour 5 minutes to 1 hour 10 minutes. Allow to cool for 30 minutes in the pan resting on its side. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature or can be sliced and frozen for up to 1 month.

Cook’s Note
This bread gets quite dark when baking, but do not fret. It is not burned but simply a lovely nutty flavor.

my luscious banana bread so I’m mashingthree ripe bananas just smash them witha fork one of the things I love aboutthis recipe is the ease I don’t need amixer I just need a handy bowl and afork so you just kind of break up thebananas and the riper they are the sweetof the banana bread and also the easierit is to mash them now you’ve got like alittle banana paste so then we’re gonnaadd one egg and the egg is just here tobind the bread together and justincorporate the egg in here now we’regonna add 3/4 of a cup of coconut sugarand coconut sugar looks like this it’slike a golden brown color it looks a lotlike brown sugar and what I love aboutit is that it’s kind of has this alittle bit of a smoky molasses II flavorso instead of just being just plain oldsweet it actually has another layer offlavor to it we are going to add almondbutter so I like the roasted almondbutter I think it has a lot more flavorto it creamy roasted almond butter to meis the best when cooking or baking withitso we’re just gonna do three tablespoonsof coconut oil then we have 3/4 of a cupof on milk and unsweetened almond milknot the flavored kind and we’re gonnaadd a little bit of salt to balance outall the sweetness and vanilla extractwhich I’m gonna do about a teaspoon ofvanilla extractagain that depth of sweetness then we’regonna do 1/2 a teaspoon of groundcinnamon to warm it all up and then 2teaspoons of baking soda so that theCape and rise okay we’ve got 1 cup ofrice flour it’s almost like using cakeflour so it creates a nice light texturein the banana bread so it’s not toodense then one cup of almond flour fortexture and for that nutty flavor therewe goand now we’re gonna mix this alltogether and allow the flowers to sortof absorb all of the liquid so now thatit’s all mixed I want to add my favoritepart the chocolate chipshave a cup of chocolate chips and I usebittersweet you could use semi-sweet ifyou wanted to I just like the flavor ofthe bittersweet so what I did is I tooka little baking loaf and I put a littleparchment paper in it and buttered itand the reason I did that is so when thebanana bread is baked and cooled we canjust kind of lift it out now we got anice beautiful looking banana bread I ama very big fan of banana bread and I’m abigger fan of chocolate and I think mygirlfriend’s will be very happy alsoit’s beautiful and then what I like todo with the walnuts is instead ofputting them inside the banana bread Itake the chopped walnuts and I just kindof line the top of the banana bread itmakes it look really pretty – okay gonnapop this in a 350 degree oven for anhour and ten minutes such a good idea ofthe chocolate this looks really like ODor nutty or something I really like himyouyou
