ASMR Baking: Custard Cream Bun(Bread)

Custard Cream Bun

Custard Filling Ingredients:
1 cup whole milk
3 egg yolks
1 tbsp corn starch
40g sugar
1/4 tsp vanilla extract
• Mix egg yolks with sugar till the sugar dissolved
• Add 1/4 tsp vanilla extract and 1 tbsp corn starch into the mixture then mix well
• Use medium fire to heat the milk till the boiling point
• Slowly pour the heated milk into the mixture and mix well then bring to boil
• Use medium heat to cook the mixture till thickened then turn off the fire
• Pour into a bowl and cover with plastic wrap, let it cool down then put into the fridge for 2 hours

Bread Ingredients:
250g bread flour
130mL whole milk
1 large egg (approx. 50g)
45g unsalted butter
15g sugar
5g yeast
• Mix sugar and yeast into the warm milk
• Add egg
• Add a small pinch of salt
• Add the mixture to the bread flour then stir thoroughly
• Cover the dough and let it rest for 15minutes.
• Set up a pastry mat and spread little bread flour on it. Add butter into the dough, and knead until it gets smooth. (Tip: butter should be in room temperature for easier mixing)
• Cover with the plastic wrap let it rest/ferment for 1 hour.

1 hour later
• Divide the dough into 6 pieces.
• Divide the custard filling into 6 pcs (approx. 20g each) then wrap it carefully and make sure there is no leaking.
• Use a table cloth to cover it then let it rest/ferment the second time for 1 hour

Topping Ingredients:
40g cake flour
2g salt
60g unsalted butter
30g sugar
• Mix all the ingredients well then put into the pastry a piping bag
• Draw a spiral on the dough

Baking
• Preheat oven to 350˚F
• Bake for 20 minutes
