مواد لازم
تره نیم کیلو
خمیر بربری ۱ چانه
نمک و فلفل سیاه و فلفل قرمز

مواد لازم برای درست کردن خمیر در خانه
آرد گندم : 1 کیلو
خمیر مایه : 20 گرم
نمک:12 گرم
شکر :15 گرم
روغن :10 گرم
آب :550 تا 600 گرم
بهبود دهنده :5 گرم

خمیر مایه را با نمک ، شکر ، بهبود دهنده و آرد با هم مخلوط کنید و کم کم به آنها آب اضافه کنید تا مواد به شکل خمیر در بیایند.
در مرحله بعد درست کردن نان بربری خمیر را 4 دقیقه ای با دست ورز دهید. بعد به خمیر روغن را اضافه کنید و 4 دقیقه دیگر ورز دهید
سپس در مرحله سوم درست کردن نان بربری روی خمیر را بپوشانید و بگذارید در محیط آشپزخانه استراحت کند و حجم آن دو برابر شود.دقت کنید که میزان استراحت خمیر بیشتر از حد کم و یا زیاد نباشد. ( تقریبا یک ساعت)

ingredients:
Leek 500 g
Barbari dough a handful
Salt, black pepper, and red pepper
.
Ingredients for making dough at home:
Wheat flour 1 kg
Yeast dough 20 g
12 grams of salt
15 grams of sugar
10 grams of oil
Water 550 to 600 grams
Dough conditioner 5 g
.
Mix the yeast dough with salt, sugar, conditioner, and flour and gradually add water to form the dough.
Then knead the dough by hand for 4 minutes. Next, add oil to the dough and knead for another 4 minutes.
In the third step, cover the dough and let it rest in the kitchen environment to double its volume. Make sure that this time interval is not too much or too little (approximately one hour).
