hey friends it’s National Pancake Dayother people might call it Mardi Grasbut we all know what we’re reallycelebrating we’re gonna make threedifferent kinds of pancakes today I’mgonna show you an all-american Swedishand Japanese style pancakes so let’s getstartedstart with some flour all of them aregonna have pretty much the sameingredients the method to preparing theMissis a little sugar and a quarter cupand two cups of flour two and a halfteaspoons of baking powder half ateaspoon of baking soda 1/2 a teaspoonof kosher saltwhiskey whisk these together you havetwo cups of buttermilktwo eggs we’re just gonna crack them inhere and whisk it and pour it in youwant lumps you can see I still have somedry clumps of flour in here coz I stillhave my butter to drizzle in and it’sabout three tablespoons and now gentlymix that in let’s move to our griddlewhich I have set up to 375 cooking sprayyields that really even beautiful Brown1/2 cup scoop now I’m gonna set a timerbut we may not even need it they’regonna have little bubbles popping upalong the sides and the sides are gonnastart to look dry all right now for themoment of truthwhoo one more batch finish off the staffI want to eat these right now but beforeI do I’m gonna show you how to makeSwedish and the Japanese let’s talkabout Swedish nuts we’re in Sweden andwe’re making Swedish pancakes nowthey’re very similar to crepes they justhave a slightly different egg to milk toflour ratio we’re just gonna puteverything in a blender though that isthe same two cups of milk 1 cup of flour1/2 a teaspoon ofsalt a tablespoon of sugar 3 eggs then 3tablespoons of melted butter looks likeI have a lot of melted butter here butthat’s because I’ll need some for my panand blender up he’s some stray bits offlour on the edges you can also just dothis in a bowl and just whisk until it’snice and frothywe’ve got a 10-inch nonstick skilletmake sure your skillet is nonstick thenwe’re going to pour about third cupsworth of batter into our skillet /pancake so it’s gonna go for about oneand a half minutes on the bottom edgeand then we’re gonna flip it and it’sgonna go for about 15 seconds so you seeI’m pouring the batter into a measuringcup each time it’s important for thesekinds of pancakes or crêpes that everypancake is only full amount the batterSwedish pancakes are served folded /rolled and then topped with variousthings you have to be very delicate withthese gonna top with some Jam stop withyour yogurt cream so now we’re gonna goa little bit more complicated and gowith fluffy Japanese pancake first stepin making these Japanese fluffy pancakesis to whip up some egg whites that’swhat’s gonna give it that beautiful risethat you’ll see later this is for eggwhites we’re gonna start on a low speedjust to get it starting to froth andthen you’re gonna jack it up to high andgo for about a minute check her outthat’s looking good to mewe’re gonna put her in the fridge untilwe’re ready for her kitchen aids out ofthe way now we can make our batter sameas before flour sugar baking powder saltbaking soda we’re gonna whisk this uphave some room temperature butter milk 2egg yolks vanilla some melted butterthis step is going to be almost exactlylike our American style ones so we’regonna drizzle it in and make sure thatthere’s still some lumps left let’s grabour egg whites I am using a spatula forthis becauseyou got better folding action the trickof folding is to go around the edge andthen cut down the middle and you want tohave some streaks of egg white lefthere’s where they get crazy we have a12-inch skillet here inside the skilletI have ring molds the pancake is gonnagrip to the sides and then use it torise up so let’s spray this liberallymedium-low is going to allow the bottomsto get nice and brown while stillcooking the whole thing instead of itjust burning on the bottom we’re thengonna spoon some of this batter intoeach of the molds cover it with a toweland then cover it with a lid and now welet this go for about 10 minutes let’scheck on these bad boys oh my gosh lookat how perfect that is there we go takethem out of there ring mold let themfinish cooking look at how all they arethese are pancakes you guys oh I’m kindof impressed with myself thank you forjoining me on this culinary journeyaround the world where we’ve discoveredAmerican pancakes Swedish pancakes andJapanese pancakes comment below whichone you’re gonna try out don’t forget tosubscribe and we’ll see you next time
