BANANA BREAD | Soft Banana Bread Muffins | Banana Muffins Recipe

Quarantine life seems to have everyone baking banana bread. So here is a great recipe for banana bread or banana bread muffins!
I had a request for this recipe on Instagram and decided to make muffins using my banana bread recipe. These muffins cook quicker and are great as a sweet breakfast treat with coffee.

INGREDIENTS
1 1/4 lb (567.5 g) fresh ripe bananas (mashed)
2 large eggs (room temperature)
3/4 packed cup (170 g) light or dark brown sugar
2 tsp vanilla extract
1 stick (113 g) unsalted butter (softened)
1/3 cup (75 g) greek yogurt or sour cream
1 3/4 cup (220 g) all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup chopped walnuts (optional)
Makes 16 to 18 muffins baked at 350º F / 176º C for 20 to 23 minutes
Makes one loaf in a 9×5 inch pan baked at 350º F / 176º C for 60 to 65 min

welcome back everybody today I’m goingto be making soft and moist banana breadmuffinsI know quarantine life has a lot ofpeople making banana breadbut today I’m going to make muffins forbreakfast here I have 3/4 of a cupthis is a packed cup of light brownsugar I actually like to use dark brownsugar so if I had dark brown I probablybe using that now since I already havemy sugar in the bowl I’m just gonna goahead and add my peeled bananas this isaround 20 ounces of whole bananas that Ipeeled basically I mean I bought theseand nobody ate them but if you haveregular-sized bananas maybe like mediumto large probably like 4 to 5 would doit’s about a pound a little over a poundof bananas work well it works well withthis recipe so now I’m just gonna go inand mash all of my ripe bananas kind ofmix it with the sugar you could alsojust mash the bananas before adding itto your bowl but it’s gonna be alltogether anyways ok so this is mashedand combined so now I’m going to addwell this kind of got a little meltedbut you’ll want to add one stick ofunsalted butter softened I’m also goingto add two teaspoons of vanilla extracttwo large eggspreferably room-temperature and I’mgoing to be adding 1/3 cup of Greekyogurt so basically someone requestedthis on Instagram they deemed me and Igave them the recipe that I normally usewhich is actually my sister so shout outto my sister and it’s for banana breadbut I know a lot of us are making bananabread for some reason in quarantine lifewhich is it’s cool it’s a good way toutilize overripe and bananas but Ithought muffins they cook a little bitquicker and you know I don’t know it’seasy you don’t have to slice into iteverybody gets thrown muffinyou could use this for banana bread aswell so I’m going to mix combined withcream it together okay so this iscombined I’m going to set it asidereally quick now I’m going to work on mydry ingredients here I have 1 and 3/4cup of all-purpose flour to that I’mgoing to add a teaspoon of groundcinnamon I’ve got one teaspoon of bakingsoda and 1/2 teaspoon of salt I’m usinga fine sea salt use what you got I’mgoing to give that a mix and actuallythink adding the ground cinnamon to yourdry mix disperses it or it combines alot better than when you add it to a wetto your wet ingredients so now I’m goingto combine my dry with my wetingredients give it a mix just kind ofmix it in there okay so this is nextgonna go ahead and start just scoopingin my batterby the way you guys know how I said thisis my sister’s recipewell it’s loosely based on her recipebecause I did switch up and change someingredients and a little bit of you knowratios I kind of added more groundcinnamon you know but for the most partthis is my sister’s banana bread recipeand actually my son she likes to putwalnuts or nuts in her banana bread tomake a banana nut bread and she gave mesuch a great alternative for those ofyou that like nuts in your banana nutbread but you’re making it nut free forexample my son has nut allergies so wehad to switch up a lot of things and alot of our recipes that had nuts in itbecause of that you could add dicedApple that gives you a nice little biteand crunch and kind of replaces thetextural the texture of the nut so thatis an idea you could also use sunflowerseeds sometimes I’ll add sunflower seedsor pumpkin seeds in here but you knowI’m leaving it out today so I’m going toput this in a preheated oven at 350degrees Fahrenheit basically till thetoothpick comes out somewhat clean it’sgonna be a very tender moist muffin soyou might have some crumb on thetoothpick but you know all right intothe oven[Music]my muffins are done these actually tookright at 22 minutes to bake so 20 20 2223 minutes in a preheated oven at 350degrees seems to work well with thesemuffins okay so I placed my muffins on acooling rack and I did manage to get 18banana bread muffins and like I statedearlier this is a banana bread recipe soyou definitely can bake it in a loaf panfor about sixty to sixty-five minutes ina loaf pan at 350 degrees Fahrenheit butI’m going to let these cool for about 15minutes or so because they are very hotso I want to show you how tender andsoft these banana bread muffins are Ihope you give this recipe a try I hopeyou like it and thanks for watching[Music]
