“The Quarantine Cook” Limoncello Waffles With Apple, Pear, Gooseberry Compote

Good morning, guys and girls! Welcome to another episode of “The Quarantine Cook”. Today, I am making Limoncello waffles with a apple, pear, and gooseberry compote. If you want a little more decadence, add a dollop of whipped cream. Enjoy!

*You will need a medium sauce pan, large mixing bowl, and a waffle iron (Please, use Pot Holders, so you do not burn yourself!).

Apple, Pear, and Gooseberry Compote:

Ingredients:

* 1 organic apple (I used Golden Delicious.)
* 1 organic Bartlett pear
* 1 can of organic gooseberries in syrup (or fresh gooseberries)
* 2 tablespoons raw sugar
* 1/3 cup organic grape juice
* 1 cup water

Directions:

Peel cut and core you are apples and pears. On stovetop, add your apples pears and gooseberries to a sauce pan. Poor in your water and grape juice. Poor sugar over top. Turn burner on high, and give your ingredients a stir. Boil down to a thick consistency; then turn your element down to a medium heat. Using a large fork or a potato masher, if you have one available, mash your fruit into a sauce. Turn burner to low heat while you make your waffles.

Limoncello Waffles:

Ingredients:

* 2 cups waffle mix
* 2 organic free range eggs
*1 1/3 cup water
*2 oz Limoncello
*2 tablespoons melted butter
*1 stick of unmelted butter

Directions:

In a large mixing bowl, add waffle mix, eggs, water, Limoncello, and melted butter. Using a whisk, mix them all together. Once your waffle iron has heated to the proper temperature, open it (WITH POT HOLDERS, SO YOU DO NOT BURN YOURSELF!), and use your stick of a melted butter to lightly coat the top and the bottom of your waffle iron. Pour waffle batter into the grooves of each section just enough to layer the bottom of your waffle iron. Close the lid, and cook for 5-6 minutes, or until the timer on the waffle iron beeps. Now, you are ready to serve your waffles! Enjoy!

[Music]all right Joey the quarantine cook todayfor breakfast I’m going to fix wafflesand we’re gonna do a fruit compote to goover that and it’s gonna be delicious tobegin with we’re going to do a fruitcompote I’m going to use sweet apple anda pear and then we’re going to mix thatwith gooseberries you can use just aboutany juice to do compost just have tocook it down have a little bit of grapejuice left so I’m going to use thisso to start with I’m going to peel andcut my apples and pears once you buildcut and pour your apples and pears takea nice fresh lemon like this amazingsqueeze it over the fruit and it’ll keepit from browning I’m doing it limoncellowaffles this morning thanks to my friendRochelle and we’re ready to start ourcompote like gooseberries in the potthat comes out of light syrup you cankeep the surveyand you’ve been throwing our apples andpearscome out you want to make sure you givethose out or you could just use a teatowel over your lemon and I’ll keep theseed from coming out before it put alittle bit of water in here with thisour leftover grape juice yeah last butnot least a little bit of sugar it’sabout to keeping tablespoons burning onhigh to start with and then we’ll turnit down to a medium which starts boilingwhile we’re waiting for our compote tocook down we’re going to get started onthe wall flip this birch benders waffleand pancake mix we got this from WholeFoods this stuff is delicious reallyokay so you’re gonna use two cups of thewaffle mix since I’m making limoncellowaffles we’re going to throw what I callthe shot in there about two ounces QXone and a half cups of water okay we’regonna whisk all this together to bereally blended and then let it sit forjust a minute and they’re gonna be readyto go I’ve already heated the waffleiron up and this thing has perfecttiming – it was a gift from somebodyvery specialone of them really you want to add toyour waffle mix is a little bit ofmelted butter[Music]now we’re ready to make waterwhat’s your compote has got a bitconsistency you’re gonna take your hairyou’re just gonna mash all your fruit init go that’s good cuz it’s gonna be likewafflesso I’ve already turn this down to a lowheat it’s almost donewell my compote is going up we’re gonnamake some waffles okay one thing aboutthe wall liner make sure you use okay sothis one has a mock up next a rocketyou’re gonna take a stick of butter andjust kind of wrap the around the bottomand the top of your wall boyand that bottle get into the gurus aswell okay so we’ll sleep this over hereyou just want to layer the bottom it’llfill in the cracksokay that’s my timer living on mywafflesokay so put these over like so kind ofstacks itself and your waffles are done[Music][Music]voila there we have lemoncello wafflesI’m Joey the quarantine cook we’ll seeyou next time[Music]
