So to Celebrate, I’m sharing with all of you some Baked Pies that is out of this World delicious, Salted Caramel Apple Hand Pies!! Full of flavor, topped with Caramel and has a amazing Sweet and Salty Balance, if you love Apple and Caramel, you will enjoy and fall in love with these; you’ll be in Apple Pie Heaven!!! These will also make great Snacks for Game Day!!

Salted Caramel Sauce
1 cup white sugar
1/2 cup water
4 tbsp unsalted butter
1/2 cup evaporated milk
1 tsp kosher or table salt (you can all another tsp if you like it extra salty)
1 tsp pure vanilla extract
1/2 tsp pure caramel extract, optional
2 (12 oz) cans buttermilk biscuits (1 can comes in 10)
Apple Pie Filling
1 large tart apple, washed, peeled, and diced
1 tbsp cornstarch
1 tbsp white sugar
1/2 tsp apple pie spice
1/2 tsp kosher or table salt
1 1/2 tsp freshly squeezed lemon juice
2 tbsp caramel sauce
Egg Wash
1 large egg
1 tsp water or milk
Sprinkling of white sugar, optional
Baker’s Note: You may use store bought caramel sauce instead of making it from Scratch. Also you can fine Caramel Extract online or at your Local Grocery Store.
For the Egg Wash: In a cup or small bowl, add egg and water or milk; mix until well combined. Set aside.
For the Salted Caramel Sauce: In a large saucepan or pot over medium heat (use a light colored pot to see the color of the caramel change more easily), add sugar and water; stir until well incorporated and bring to a gentle boil. Gently tilting the pot occasionally to ensure even caramelization. Boil for 6-8 minutes until it achieves a medium copper color. Remove from the heat and add in the butter, evaporated milk, vanilla and caramel extract and salt; whisk until well combined. If clumps form, return to a low heat and whisk until smooth. Pour caramel sauce into a microwave save bowl and cool completely. Reserving 2 tablespoons.
For the Apple Pie Filling: In a medium bowl, add apples, cornstarch, sugar, apple pie spice, salt, caramel, and lemon juice; stir until well combined (it will create a glaze).
Preheat Oven to 375 Degrees
Line a 9×13 inch long cookie sheet with aluminum foil or parchment paper and grease with baking spray; set aside.
On a floured surface and using a rolling pin, roll biscuits to 1/2 inch thick. Brush edges of 1 biscuit with the egg wash, then spoon 1 tablespoon of the apple filling in the center, then cover with another biscuit on top. Press to seal and use tines of a fork to press the edges together then repeat the process. Place pies onto the greased pan then cup 4 small strips on top of each pie. Brush the pies with the egg wash then sprinkle with sugar (if using). Bake for 20-22 minutes until golden brown. Remove from the oven and cool completely on a wire rack. Place apple pies onto a platter, drizzle with the rest of the caramel sauce, serve with vanilla ice cream (if using), and enjoy!
