We made a double batch but this recipe is for a single batch
Crust:
3 cups flour
1 tbsp baking powder
1 tsp salt
1 cup lard or shortening
2 beaten eggs
¼ to ⅓ cup milk
Directions:
First mix dry ingredients then add the rest. Mix gently. DO NOT OVER MIX.
Let rest for an hour (or longer) before using.
Filling:
2 cups fresh or frozen rhubarb
½ cup to 1 cup sugar (add more or less to taste)
Directions:
Put everything into a pot, boil until thickened. If its too thin for your taste, you can add flour or corn starch to thicken.
Bake at 350ºF for 40-60 minutes, depends on the thickness of the pie. Once crust is golden brown, it’s ready.
