Follow Joel from My Market Kitchen as he guides you through some simple steps to bake one extremely tasty golden crispy pie! Yummy!
Cooking Instructions:
• Preheat the oven to 180°C.
• Combine the peaches, cinnamon, Glucerna powder, allspice, lemon zest, water and 1 tbsp. brown sugar in a saucepan and cook over low-medium heat.
• Glucerna contains a unique blend of low GI carbohydrates which may help to curb the blood sugar responses in those with diabetes.
• Cook and cover for 5 minutes and stir occasionally. Remove from the heat and allow to cool.
• Line a 20cm pie dish with 1 sheet of pastry and trim any excess.
• Spoon the peach mixture over the base and brush the edges with the egg yolk.
• Place the second sheet of pastry over the top of the filling and seal the edges with a fork. Brush with remaining egg yolk and sprinkle remaining sugar over the top.
• Place in oven and bake for 25 minutes.
• Cover with foil for a further 15 minutes or until golden brown. Remove from oven and set aside to cool.
