Saylem’s Apple Pie
(Refer to the video for full instructions)
Pie Crust
1 cup Chilled and Chopped(cubed) Butter (you can use salted or unsalted)
2 1/2 Cups All-Purpose Flour
1 Tablespoon Sugar
1 Teaspoon Salt
6-8 Tablespoons Ice Water
*Extra flour for dusting your work surface
Apple Pie Filling
About 3lbs of Apples (6-8 Apples) I used 3 Granny Smith and 3 Honey Crisp
1/2 Cup Butter (you can use salted or unsalted)
3 Tablespoons All-Purpose Flour
1/4 Cup Water
1 Teaspoon Vanilla Extract
1/2 Cup Sugar
1/2 Cup Packed Brown Sugar (you can use light, golden or dark brown sugar)
2 Teaspoons Cinnamon
1/2 Teaspoon Nutmeg
* The juice of half a lemon or a tablespoon of apple cider vinegar to coat your apple slices. Preventing your apples from turning brown.
Egg Wash
1 Egg
1 Tablespoon Cream, Half and Half or Milk
Whisk both ingredients together.
Combine 1.5cups of the flour, sugar and salt in a large bowl. Cut in chilled cubed butted until the butter becomes the size of a pea. You can use a pastry cutter, two forks or a food processor. Cut in the remaining flour.
Sprinkle in 4 Tablespoons of the ice water and mix in, using a spoon or spatula. Add additional tablespoons of water until the dough starts to come together when you pinch it. Do not use more than 8 Tablespoons of water.
Turn the dough over to your work surface. Form the dough in to a ball and knead the dough until it forms a solid ball. Try not to overwork your dough.
Cut the dough ball in half, shape in to two discs. Cover and chill for a minimum of one hour.
Apple Pie Filling
Melt 1/2 cup of butter in a saucepot or saucepan. Stir or whisk in flour ,creating a paste. Mix in the remaining ingredients and bring the mixture to a low boil. Remove from heat.
Prepare, peel and slice your apples and place in a large bowl. Coating your apples with the lemon juice or apple cider vinegar as you add the sliced apples to the bowl. This will prevent the apples from turning brown.
Preheat your oven to 425°
Roll out one of the discs of chilled dough in to a 12″ round and place in a 9″ pie pan. Gently press the dough down on to the Botton and sides of the pie pan. Place the pie pan in the freezer while you roll out the second disc of dough forming the lattice top. Roll out a 10″-11″ round and cut 3/4″ bands.
Take your pie pan and scoop in the apple pie filling. Try not to get the mixture on the outer edge of your crust as it will make it easier for you to join the top and bottom crusts together once assembled.
Create your lattice top and seal together the top and bottom crust with a fork or pinch with your fingers.
Evenly brush the lattice top and outer edge of the pie with the egg wash.
Place on a foil lined pan and bake for 15mins at 425°. Reduce heat to 350° and continue baking for an additional 35min-45min or until the apples become soft. The crust will be a beautiful golden brown.
Let cool for a minimum of 1-2hours. The pie will be very hot and will need time to cool and set. If you let the pie cool sufficiently, it will be very easy to cut and serve.
