“Chicken Mushroom Pie”
Ingredients:
500g of Chicken Breast
100-150g of Bacon (cut into squares)
250g of Brown button mushrooms
10g Dried Porcini Mushrooms (soaked)
20g Butter
1 Onion, yellow or white is the best option (sliced)
1/4 tsp of Nutmeg (grated)
2 Bay Leaves
1/2 tsp of Thyme
1 heaped tbsp of Flour
1 heaped tsp of Mustard
1 tbsp of Creme Fresh (or Sour Cream with high fat content)
250ml – 300ml of Chicken Stock
1 Pastry sheet
Salt
Pepper
Method:
1. Preheat the oven to 200C
2. Soak 10g of dried porcini mushroom in the hot water for 30 mins. After drain the water.
3. In large sauce pan sauté onion and chicken on vegetable oil. Season with salt and pepper. (i wouldn’t recommend to use a lot of salt as the bacon usually quite salty and as result the naturally occurring salt is more than enough)
4. In another frying pan fry bacon together with sliced brown mushrooms on the melted butter.
5. Grate 1/4 tsp of nutmeg into the pan with the chicken, add thyme and 2 bay leaves and mix it.
6. Once bacon looks almost cooked add it to the pan with the chicken as well as chopped porcini mushrooms.
7. Stir in 1 tbsp of Cream Fresh, 1 heaped tsp of mustard and 1 heaped tbs of flour.
8. Pour in 300ml of chicken stock and mix everything well. Simmer the mixture until thicken.
9. Transfer ready filling to a baking dish and make sure that the mixture spread evenly. Cover with pastry sheet and arrange the dough the way you like,
10. Brush the the dough on top with egg yolk mixed with 1 tsp of milk
11. Sprinkle sesame seeds on top if desired
12. Bake for 20-25 mins (till the crust turns golden-brown at 200C
13. Serve pie with chips or mushed potato.
