Hey y’all! I’m still in Texas after Hurricane Sally and wanted to do some pie baking with my mom for you. I love her coconut & chocolate pies but I can never quite get them to turn out just like hers! So, I’m sharing her ways with you and me!!

Nana’s Coconut Pie
Crust:
1 cup flour
Sprinkle salt
1/3 cup crisco shortening
4 Tbs water (or my moms palm full) 😄
Blend with fork, adding more flour or water as needed until it feels like a nice dough ball
Lay out on floured surface and roll out dough until it is big enough to fit in pie plate with dough on the sides.
Fold it, place in pie plate and fold the sides down. Take your fingers and flute the sides all around making a design.
Bake crust at 350 until browned- around 10-15 minutes
For filling:
1/3 cup flour
2/3 cup sugar
Sprinkle salt
2 cups milk
3 egg yolks
Stir in saucepan over medium heat until thickened. When it starts to thicken, add in
2 Tbsp butter
1 tsp vanilla
1 cup sweetened coconut flakes
Pour filling into cooked crust and get started on meringue.
3 egg whites
1/4 tsp cream of tarter
5 Tbs sugar
Beat egg whites and cream of tarter until stiff peaks form. Then add in sugar gradually, mixing after each addition. Spread on top of filling- sprinkle coconut flakes on top and put back in oven just until the meringue has browned to your liking.
(The chocolate pie I made was the same filling recipe except we used 4 Tbs Hershey’s cocoa powder instead of coconut)
