Blueberry pie goodness recipe
Crust Ingredients
12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon sugar
1/3 cup very cold vegetable shortening
6 to 8 tablespoons (about 1/2 cup) ice water
Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Dice and add the butter and shortening. Pulse until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out and wrap let refrigerate for at least 30 minutes.
Blueberry filling ingredients
4 – 5 cups of blueberries
3/4 of a cup of sugar
2 tbsp of water
2 tbsp of cornstarch
pinch of nutmeg
1/2 tsp of cinnamon
a squeeze of lemon juice
2 tbsp of butter
simmer 1 cup of blueberries and sugar till sugar dissolves about 5 minutes
mix the 2 tbsp spoons of water and 2 tbsp of corn starch and add the the berry mix turn up heat and let it boil. it will turn to jelly. let it cool, and add the the remaining 3 cups of fresh blueberries. Add the nutmeg, cinnamon, lemon juice and butter.
