This simple recipe makes 1 Giant Oatmeal Creme Pie – like an old-fashioned Little Debbie, but bigger and better!
Ingredients
1/2 cup + 1 Tablespoon (70g) all-purpose flour (spoon & leveled)
1/2 cup (40g) quick oats*
1/4 teaspoon + 1/8 teaspoon baking soda*
1/4 teaspoon ground cinnamon
1/4 cup (60g) unsalted butter, softened to room temperature
1/2 cup (100g) packed light or dark brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
Creme Filling
3 Tablespoons (45g) unsalted butter, softened to room temperature
2/3 cup (80g) confectioners’ sugar
1 Tablespoon (15ml) heavy cream*
1/4 teaspoon pure vanilla extract
pinch salt
